Versatile Zucchini
We love zucchini. We steam it, pan fry it, grill it, oven roast it and bake it into bread. So versatile and delicious. Last week one of our employees brought in her spiralizer, a hand held device that turns zucchini into long thin strings that look like noodles (sometimes called zoodles). She topped the uncooked zucchini noodles with homemade baba ghanouch (eggplant dip) and sunflower seeds and we ate it as a cold salad. It was very refreshing on a hot day. You could top the same zucchini noodles with a peanut sauce and cilantro, soy sauce and toasted sesame seeds or chopped cherry tomatoes with olive oil and balsamic vinegar. The combinations are endless.
