Fulton Street progress report:

Building a shop is apparently equal parts vision, stubbornness, cursing and sweeping.

Tiny shop. Big memories. Lots of love.

Babies became kids. Customers became friends.
And somehow we got to witness a whole lot of life between the cheese counter and the wine shelves.

We wouldn’t trade a minute of it. ❤️

Some of these little ones probably have driver’s permits now and frankly we are not emotionally prepared for that. ❤️

Fulton Street is slowly teaching us patience.

Not the glamorous kind — the real kind.

The kind that comes with paint on your hands, windows taped for another coat, walls opened up, and a thousand tiny decisions that somehow become one beautiful whole.

This old building has stories in its bones, and we’re trying our best to listen while leaving a little bit of goat.sheep.cow. too.

Still dusty.
Still unfinished.
Still deeply in love with the process.

Same doorway.
Very different story.

We started with something beautiful — and then took it apart.

Not because it wasn’t good…
but because we know what it can be.

This is the part that feels a little wild in the moment —
pulling things back to the bones and trusting the vision.

We’ll build it back, thoughtfully.

Easter is quickly approaching and we’ve got wheels on wheels of the finest cheese! As promised, here are the champions of our latest drop.

Trezieme Apotre— a raw, semi-soft goats milk cheese hailing from Fromage du Presbytere of Quebec. Fruity, milky, and perfectly goat-y!

Chemin du Brûlé— raw, semi-soft cows milk cheese of the likes of the classic French Morbier, but make it Canadian. Smooth, complex, brothy, and nutty (like hazelnut).

Raclette au Poivre— a quick seller! Classic Raclette from La Station in Quebec , but add pink peppercorn for a perfectly balanced floral spice. Buttery, nutty, and melty. Gone before you know it.

L’Amuse Gouda— cheese, but make it candy-like. Hard, cow’s milk; fudgy, rich, and sweet. This one is addictive and loved by all— no niche palate needed. Perfect for an Easter board enjoyed by the whole fam.

Brabander Goat Gouda— another with noticeable sweetness. Creamy, earthy, and with a caramel-like finish. A shop favorite!

Shadow Blossom— the latest cool kid in the world of cheese. Rolled in 6 types of peppercorn for a bold yet beautifully balanced, savory flavor.

And many more, but you’ll just have to come in and test them out for yourself! 😋
