Our very own Pesto is back. This is my comfort food right here. Served over spaghetti just like my mom used to make- instructions below. The kind of meal that transports you to summer no matter the time of year, but especially in the deep winter months. A freezer staple in my house, and hopefully yours soon. Our team is finding our groove on the processing end, and yet with plenty of basil in the field and a final round going in today, we hope to have this very special product available through our winter markets. But just in case, you should come grab some sooner rather than later ๐
Instructions:
Add potato (peeled) to a large pot of water and bring to a boil. Add pasta when potato can be pricked with a fork. Cook pasta according to package.
While spaghetti is cooking, empty pesto into a mixing bowl with butter 1/2 stick. Shortly before pasta is tone, add 4 tablespoons of the starchy pasta water to the pesto.
Drain pasta and combine with cooked potato (fork it apart) and pesto mixture. Toss with grated pecorino Romano and serve.
Tastes great cold the next day too ๐
