HOW TO ROAST A TURKEY 🦃🔥

Uncle Dan swears by searing it in a 450 oven and immediately dropping it to 300. Grandma Helga insists it be trussed and roasted at 375 the whole way through. Loony Aunt Sophie says to blast it at 550 for twelve minutes, turn the oven off, and pull the bird two hours later (she should have been cut off after her third martini).

So what's the best way to cook this cumbersome, awkwardly put-together bird?

💡 Pro tip: temp the thickest part of the thigh, not the breast. It's the last spot to finish, and a probe on a cord lets you leave it buried while the display sits outside the oven. And save the carcass for stock.
