We have had several messages about the nopales cactus .
Where we don’t have a lot experience with them this is the information that I have found in my research.
Preparation
To prep the cactus pad, hold it with kitchen tongs or a folded towel to avoid the tiny, sharp thorns.
Shave the Thorns: Run a sharp knife flat against the paddle to shave off the raised bumps (areoles) and spines.
Trim the Edges: Slice off the outer rim and the thick base.
Wash: Rinse the trimmed paddle thoroughly.
2. Cooking Methods
When cooked, they exude a mucilaginous, slightly slimy texture—similar to okra.
Boiling: Chop the pads into squares or strips. Boil in salted water (add onion, cilantro, and garlic for flavor) for 15–20 minutes until they change from bright green to olive. Drain and rinse.
Grilling or Sautéing: Sear whole or scored pads on a hot, oiled skillet. The natural, sticky juices will release and evaporate. Once dry, cook until tender and slightly charred.

Where to Buy: You can frequently find fresh nopales at local Mexican markets or larger chain stores like Safeway. Pre-cleaned and diced packaged nopales are sometimes available in the produce aisle.
Storage: Wrap fresh, whole pads tightly in plastic or a damp cloth and store them in the crisper drawer of your refrigerator, where they can last for over a week.
