With 28 years of experience, Sam still does things the traditional way—purchasing whole cuts of meat, evaluating them himself, trimming them properly, and hand-cutting everything fresh in-house. In a world where many stores receive pre-cut meat to save costs, Sam takes pride in keeping the craft of true butchery alive.
Sam was trained by a master butcher who believed every cut should be done the right way, and that attention to detail stuck with him. He often says that if something wasn’t cut properly, his mentor would hand it back and ask him to figure out what was wrong and do it again. That passion, discipline, and perfectionism are part of what makes our meat department so special today.
We are incredibly proud of the quality of our cuts and truly believe they stand up against any high-end butcher shop around—all while keeping prices fair and doing as much as possible in-house.
