In its first year, The Big Cheese was at the Orleans County fair in Albion, NY and the Erie County Fair in Hamburg, NY. Home of the Buffalo Wing Grilled Cheese made with "Yancey's Fancy Buffalo Wing Cheese".

2024 The Big Cheese has enhanced operations with a brand new trailer, custom built, and featured at the Erie County Fair!

In addition to the new trailer, pictured to the right of The Big Cheese is the new business model The Big Freeze, selling Italian Ice, Chocolate covered products like Stawberries, Cheesecake, and more!
