We love our local farmers’ market on Tuesdays in Loveland! Shine or rain our vendors show up to provide us with the freshest produce for our weekly meals. Don’t miss the wonderful summer recipe by Loveland Farmers' Market posted below:
Sicilian Pasta with Green Beans
(Pasta con Fagiolini)
Serves 4
Ingredients:
12 oz pasta (spaghetti, linguine, or short pasta like rigatoni)
1 lb fresh West Family Produce & Flowers green beans, trimmed and cut into 1–2 inch pieces
4–5 Crazy Acres Market Farm cloves garlic, thinly sliced
¼ cup Kofinas Olive Oil
1 pint Salatin's Orchard cherry tomatoes, halved
½ tsp red pepper flakes (optional)
Salt
Freshly ground black pepper
½ cup The Cheese Lady Cincinnati grated cheese (Parmesan Type)
Fresh basil or parsley
1/2 - 1 cup reserved pasta water
Instructions:
Bring a large pot of salted water to a boil.
Add the green beans and pasta and cook as directed on the pasta box. Reserve at least 1 cup pasta water before draining for the sauce.
Build the sauce:
In a large skillet, heat olive oil over medium-low.
Add garlic and slowly let it flavor the oil (don’t brown it).
Add tomatoes and cook until they soften.
Add the pasta with green beans and the pasta water to the cooked tomatoes in the skillet. Toss is together until the olive oil and starch create a silky sauce.
Add plenty of cheese and toss again.
Plate:
Drizzle with a little more olive oilband top basil or parsley.
Serve with extra cheese.
For dessert:
Serve sliced, freshly harvested melon, drizzled with LFM local honey and topped with Jaybird Farms chopped fresh basil or mint.
