Like quinoa? This superfood quinoa salad, rich in antioxidants and vitamin E & C, is fresh, easy and quick!

Ingredients:
1 Cup Quinoa
2 Cups Water
1 Pomegranate (seeds and juice only)
1/2 Cup Slivered Toasted Almonds
3 Tablespoons Minced Ginger
1 Lime (Juiced)
Salt & Pepper to taste
1/3 Cup 13 Olives Persian Lime Olive Oil
1/3 Cup 13 Olives Lemongrass Mint White Balsamic

Method:
Combine quinoa and water in a pot and let simmer for 20 minutes. Once quinoa is cooked, place on baking tray and let it cool. Combine remaining ingredients, toss, and taste. Enjoy!
