We don’t just sell pumpkins at Country Pumpkin! We sell a variety of winter squash as well, this year we have butternut, green acorn, spaghetti and Delicata squash. This is our favorite delicata squash recipe. There’s no need to peel delicata which makes this recipe so easy!

Slice squash down the middle long ways, take out seeds and slice each half into 1/2” half moons. Toss with olive oil, salt and pepper. Roast at 425* for 15 minutes then flip and roast another 15 minutes. I like to get it crispy at the end by turning on the broiler for a couple of minutes.

Add crumbled goat cheese, pomegranate seeds and chopped Italian parsley then drizzle with a little honey. This recipe is so cozy and perfect for fall or the holidays!
