Starting tomorrow we will have red beans and rice, OCP gumbo, and traditional Cajun style boudin.

This is one of our signature rib racks. As a whole animal butcher shop, this is a challenging time of the year. Everyone wants rib racks and tenderloin. On a 720 # carcass, the rib racks are approximately 30 lbs and the tenderloin about 7 lbs. That leaves our butchers with a lot of cleanup work to use the rest of the animal!

As a result, we won't have enough rib racks or tenderloin to go around. They will sell out Pre-order, usually within days of our order form going live.

But there are so many more tasty options. Check out our offerings and consider a seasoned lamb saddle, leg of lamb, pork rib rack, or simply a smoked holiday ham.
