Fall Treats Series — Recipe Number Three & countdown to the pumpkin patch opening September 19th! 🎃

There’s something about this ham & cheese quiche that instantly makes me feel like the holidays are here. This recipe comes straight from my grandma’s recipe book, and it’s one I’ll always come back to. 🥧✨

Grandma’s Ham & Cheese Quiche
For the buttery crust:
1⅓ cups flour
tsp salt
½ cup butter
4 Tbsp cold water

For the quiche:
1 pie crust, prepared and baked
½ lb ham, pre-baked and diced
1 cup cheddar cheese
4 eggs
½ cup milk
½ cup heavy cream
2 Tbsp melted butter
1 Tbsp flour
Pinch of salt
Pinch of pepper

For the crust:
1. Measure flour and salt into a bowl.
2. Cut in the cold butter until the mixture is crumbly and the butter is thoroughly incorporated.
3. Sprinkle in the cold water and use a pastry cutter or fork to combine until the dough comes together.
4. Gather the dough into a ball and flatten into a round.
5. Place on a lightly floured surface and roll with a floured rolling pin until the dough is about 2 inches larger than your pie pan.
6. Gently roll the pastry around the rolling pin, then unroll it over your pie pan.
7. Ease the pastry into the pan without stretching it. Trim the overhanging edges and crimp the edges with your fingers.
8. Prick the bottom and sides of the crust with a fork.
9. Bake at 475°F for 8–10 minutes, until lightly golden.

For the quiche:
1. Used pre baked ham or fry, dice and set aside.
2. Scatter the ham and cheese over the bottom of the baked pie crust.
3. In a bowl, beat together the egg, milk, heavy cream, melted butter, flour, salt and pepper until well blended.
4. Pour the egg mixture evenly over the ham and cheese.
5. Bake at 375°F for about 40 minutes, or until the quiche is set in the center and golden on top.
6. Let it cool for a few minutes, slice, and enjoy warm.

We’re so excited to open the gates at Creekside Acres on September 19th and kick off another fall season!

Come pick out your pumpkin, find the perfect mum, visit the farm animals, enjoy the corn maze, and bring your camera for fall family photos! 📸

We’ll be open every weekend through October 25th!

Weekend Hours:
Friday: 3–7 PM
Saturday: 10 AM–7 PM
Sunday: 12–7 PM

Admission is $5 per person, with $3 credit toward a pumpkin or mum.

Note - professional photographers are welcome during our regular open hours!

Pumpkin Cream Cheese Cookies are officially on the fall baking list! 🍪🎃

These take a little bit of prep (especially drying out the pumpkin + freezing the cream cheese swirl), but I promise they are SO worth it. Soft, chewy, full of warm fall spices, and that sweet cream cheese center?! 🤎

Pumpkin Cream Cheese Cookies
Makes about 12 cookies

🍪 Cookie Dough
Wet ingredients:
• 170 g unsalted butter, browned & brought back to room temp
• 1 tsp vanilla bean paste
• 1 cup light brown sugar
• 2 room-temperature egg yolks
• ½ cup dried/canned pumpkin, pressed between paper towels until most of the moisture is removed

Dry ingredients:
• 1¾ cups all-purpose flour
• 1 tsp salt
• 1 tsp cinnamon
• ½ tsp ginger
• 1 tbsp pumpkin pie spice
• ½ tsp baking soda
• ½ tsp baking powder

Cream Cheese Swirl
• 1 package cream cheese
• ⅓ cup powdered sugar
• 2 tsp vanilla bean paste
• Pinch of salt

Cinnamon Sugar
• ½ cup cane sugar
• 1 tbsp cinnamon

Instructions
1. Mix the cinnamon and sugar together and set aside.
2. Make the cream cheese swirl by whisking together the cream cheese, powdered sugar, vanilla bean paste, and salt.
3. Spread the cream cheese mixture in a thin layer onto a parchment-lined pan and freeze until completely solid.
4. Place the canned pumpkin between paper towels and continuously pat it down until most of the liquid is removed.
5. Mix the dry ingredients together.
6. Cream the browned butter, vanilla bean paste, and brown sugar until light and fluffy.
7. Add the egg yolks and mix to combine.
8. Add the dry ingredients and mix until just combined.
9. Cut up the frozen cream cheese layer and add it to the cookie dough. Stir to combine.
10. Scoop the dough into even-sized balls (about 12 cookies) and roll in the cinnamon sugar.
11. Refrigerate the dough for 24 hours to let it settle.
12. When ready to bake, preheat oven to 350°F.
13. Bake for 12- 14 minutes, depending on your oven.

Happy September 1st! 🍂🎃 It’s officially “BER” season, which means cozy baking, crisp mornings, and all things pumpkin are officially back!

These Pumpkin Brown Butter Scones are the perfect recipe to get you in the fall spirit. Buttery, perfectly spiced, and topped with a maple brown butter glaze.

Scones:
2 cups flour
⅓ cup brown sugar
2½ tsp baking powder
1 tsp salt
1 tsp cinnamon
1½ tsp pumpkin pie spice
½ cup cold butter, grated
⅓ cup heavy cream
1 egg
½ cup pumpkin butter
1 tsp vanilla

Combine dry ingredients, then grate in cold butter and gently mix. Whisk together cream, egg, pumpkin butter, vanilla and stir into the dry ingredients until a dough forms. Gently fold the dough together, shape into a 1” thick circle, and cut into pieces. Brush with heavy cream and bake at 400°F for 16–18 minutes.

Maple Brown Butter Glaze:
2 tbsp butter, browned
⅓ cup maple syrup
1 tsp vanilla
½ tsp salt
1 cup powdered sugar

Mix until thick and spread over slightly cooled scones. Enjoy!🤎

Fall is right around the corner, which means it’s almost pumpkin patch time! We’re looking for a few good people to come work with us this season.

If you’re friendly, hardworking, dependable, and enjoy being around people, we’d love to hear from you!

You’ll be outside, you’ll be on your feet for a good part of the day, and yes… East Tennessee can still be pretty warm in the fall! ☀️🍂

We need people who are available Friday (3-7pm), Saturday (10-7pm), and Sunday (12-7pm) from September 19th through October 25th. You’ll be helping us with guests, families, kids, and all the little things that go into making the pumpkin patch a fun place to visit.
