🌯 Easy Sheet-Pan Chicken Fajitas
Some nights, dinner just needs to be easy—and colorful certainly doesn’t hurt! These chicken fajitas come together on one sheet pan, which means plenty of flavor and very little cleanup.
Ingredients
• 1½ pounds boneless, skinless chicken breasts, cut into ½-inch strips
• 2 bell peppers, cut into strips
• 1 large yellow onion, cut into wedges
• 3 tablespoons olive oil
• 2 teaspoons smoked paprika
• 1 teaspoon ground cumin
• 1 teaspoon kosher salt
• 1 lime, cut into wedges
• 8 small flour tortillas
Directions
1. Heat the oven to 450°F and line a rimmed sheet pan with foil.
2. Toss the chicken, peppers and onion with the olive oil, smoked paprika, cumin and salt. Spread everything across the pan in a single, uncrowded layer.
3. Roast for 10 minutes. Turn the chicken and vegetables, then roast for another 7–9 minutes, until the chicken reaches 165°F and the edges of the peppers begin to blister.
4. Wrap the tortillas in foil and place them in a corner of the pan during the final five minutes to warm.
5. Squeeze the lime over the chicken mixture, divide everything among the warm tortillas and enjoy!
