This week’s market is packed with fresh local goodies and handmade favorites! Stop by for local honey and jams, veggie and flower starts, sourdough sandwich bread and sub loaves, bagels, dill pickle bread, artisan and sweet breads, homemade cookies, rhubarb bread, rhubarb crisp, fruit pies, fresh shredded and block cheese, rhubarb, asparagus, canned vegetables, aronia juice, freeze-dried candies, farm fresh eggs and duck eggs, locally grown mushrooms such as shiitake, lions mane, a variety of oysters, and wine caps, herbs, goat milk soaps and lotions, frozen whole chicken pieces, and cupcakes made with locally sourced ingredients — including cupcakes with no gluten ingredients added!

🌷☀️ Warmer weather is finally here, and the Cold Spring Farmers Market is filling up with all your local favorites this week! ☀️🌷

Come shop a wonderful variety of locally grown, baked, handcrafted, and homemade goods including canned goods, jams, local honey, onions, potatoes, plant starts for your garden, sourdough sandwich bread and sub loaves, fresh-grown mushrooms, handcrafted jewelry, baby quilts, quilted table runners, dish towel sets, dish scrubbies, artisan and sweet breads, freeze-dried candies, cookies, goat milk soaps and lotions, fresh eggs, and so much more!

✨ We’re also excited to welcome a BRAND-NEW vendor this week — Cowgirl Acres! They’ll be bringing whole frozen chicken, maple syrup, duck eggs, chicken eggs, and other farm-fresh goodies.

A HUGE thank you to everyone who braved the chilly temperatures and came out to support our amazing vendors yesterday! 💛

Opening day may have felt a little more like fall than spring 🍂🥶, but the warmth and support from this community showed up strong. From the live music and delicious food to all the shopping, smiles, and conversations — we are so grateful for each and every one of you.

Our vendors truly appreciate all the love you showed them and we are so excited for everything this market season has in store! 🌷☀️

Under The Hood Grill and Catering hit the road in 2024 after more than 15 years of dreaming and planning. They specialize in smashburgers, cheesesteaks, and gourmet hot dogs — with customer favorites like their Chicago dog and Talladega cheesesteak. Their burgers are hand-pattied fresh daily, and their smash sauce and coney chili are made from scratch. Pair that with locally sourced ingredients and a passion for great food, and you’ve got a stop you won’t want to miss!

Healthy Heritage Farm began in 2015 as a family dream brought to life by a husband-and-wife team, with their children learning and working alongside them from the very beginning. What started small has grown steadily over the years, with each season bringing new lessons, challenges, and opportunities to expand.

The farm is rooted in a commitment to growing food as naturally as possible. Using organic seeds and soil, they avoid harmful pesticides and follow regenerative farming practices to care for both the land and the food they produce.

Their stand at the Cold Spring Farmers Market offers a wide variety of fresh and homemade goods, including plant starts, seasonal produce, and bulk favorites like cucumbers, green beans, and sweet corn. They also feature microgreens, raw sauerkraut, pickles, beets, and other canned items, along with colorful peppers, cabbage, and geraniums. Best of all, their produce travels just five miles from field to market, ensuring exceptional freshness.

Life on the farm starts early, with mornings spent harvesting, planting, weeding, and preparing items for market. Farming requires dedication and grit, especially when facing unpredictable weather—from dry spells to damaging storms.

One of their biggest priorities is harvesting produce the day of the market and quickly washing and cooling it to preserve quality. While the work is demanding, the reward is seeing their food nourish local families, especially children.

What began as a simple act of love in her home kitchen has grown into a heartfelt presence at local farmers markets. For this artisan baker, the journey started as an at-home mom making bread for her family—something she says has always been her way of showing love. Encouraged by her mother-in-law, who insisted her bread was too good not to share, she took a leap and brought her creations to the market.

Today, she offers a variety of artisan breads, from traditional white, wheat, and pumpernickel to creative flavored loaves and sweet treats. Her recipes blend originality with a foundation in classic baking, resulting in customer favorites like Spicy Cheddar, Big Dill, and Cinnamon Raisin breads. Seasonal specialties, like her popular fall “twists”—a sweet cross between a bagel and a donut—keep customers coming back for more.

Behind the scenes, each market day is the result of careful planning and long hours. From selecting flavors based on the season to sourcing ingredients and packaging, preparation is no small task. The day before a market often means 10 to 16 hours spent baking and getting everything ready.

Quality is at the heart of her work. She prioritizes ingredients that are simple and recognizable, believing people should understand what they’re eating. Her favorite item to bake remains her banana bread—a recipe inspired by her grandmother, connecting past and present through each loaf.

From Dairy Farm to Artisan Cheese: A Local Family’s Journey

What started as a small dairy operation in 1995 has grown into a unique farmstead cheese business rooted in passion, resilience, and craftsmanship. After years of managing a herd that expanded from 10 to 80 cows—and navigating the ups and downs of milk prices—the family made a major shift in 2010. They sold their herd, but not their love for dairy.

David, determined to stay connected to the industry, began working in several cheese plants, gaining hands-on experience and insight into the art of cheesemaking. Meanwhile, the family kept a few cows for personal use—and a new idea quietly took shape. Using their own milk, they began experimenting with making cheese at home.

That passion turned into reality in 2023 when they transformed an old garage into a licensed cheesehouse. By May 2024, they officially received their Minnesota farmstead cheese manufacturing license, marking the beginning of a new chapter.

Today, they produce a cheddar-style cheese called Edenshire, named after Eden Lake Township where their farm is located. Shoppers at the local farmers market can enjoy both a 6-month aged variety—firm with a tangy bite—and a 12-month aged version, known for its creamier texture and more developed, mellow flavor. Flavored options like tomato basil and garlic dill add a creative twist to their lineup.

All of their cheese is made using milk from their own herd of Holstein cows. From milking twice daily to carefully aging each batch, the process is hands-on from start to finish. Their traditional cheesemaking method includes culturing with kefir, cooking the curd, pressing, and aging—resulting in a high-quality, natural product.

Many customers are surprised to learn that aged raw milk cheese contains very little lactose and, thanks to strict aging requirements and testing, is safe to enjoy. Each batch is carefully monitored to ensure quality and safety before it reaches market shelves.

Their cheese is as versatile as it is flavorful—perfect melted over eggs or vegetables, added to pizza, or paired with crackers, fruit, or even a glass of wine.

What truly sets their cheese apart is their commitment to small-batch production and their use of a live, farm-grown culture made from kefir grains and fresh milk. It’s a process that reflects both tradition and innovation.

For this family, the best part of the journey is connecting with customers—sharing their story, answering questions, and hearing how their cheese becomes part of others’ meals and memories.

From pasture to plate, their story is one of dedication, reinvention, and a deep-rooted love for dairy.
