Fresh, vibrant, and packed with feel-good ingredients — this Easy Quinoa Salad with Basil Lemon Vinaigrette is loaded with plant-based protein, crisp veggies, and bright Mediterranean-inspired flavor 🥗✨ The perfect healthy lunch, side dish, or meal prep option for warmer days.

Ingredients:

The veggies are an estimate, just add whatever looks like there’s a bite or two per spoonful!
1 cup of dry Quinoa
1 cup orange cherry tomatoes, quartered
1 cup chopped red cabbage
half of a large cucumber, quartered
half of a small red onion, chopped
a handful of arugula, rinsed and patted dry (optional if you want to add a little “kick”)

For the Dressing:
1/4 cup The Olive Tap’s Basil Olive Oil
1/4 cup The Olive Tap’s Sicilian Lemon Balsamic Vinegar
(adjust amount to your flavor preference)
pinch of salt to taste (Seasonello, if you have it!)

Directions:

Cook the quinoa according to package directions and let cool. Add all the veggies and toss to combine. Drizzle as much of the vinaigrette as desired to your taste and gently stir to coat salad with the dressing.
*If not vegan, add some Feta cheese, delicious!

🌮🎉 Cinco de Mayo Starts in Your Kitchen!

Add our Fresh Grilled Corn Salad to your menu!🌽

Ingredients:
4 ears fresh sweet corn, remove husks and silk ( or equal to about 4-5 cups of corn)
3 Tbsp The Olive Tap’s Jalapeño Olive Oil (or Spicy Green Chili Olive Oil), plus more for brushing on corn
Juice of 1 lime
1/2 teaspoon The Olive Tap’s Mexican Street Corn Seasoning (or to your taste)
1/3 cup sliced & chopped red onion
1/2 cup crumbled Cotija, or feta cheese, plus more for garnish
1/4 cup finely chopped fresh cilantro, plus more for garnish

Directions:
Preheat grill to medium-high heat. Brush the corn with the Jalapeno Olive Oil and grill, turning occasionally, until lightly charred on all sides. Let the corn cool slightly, then cut the kernels off the cobs into a large bowl. Add the Jalapeño Olive Oil, lime juice, Mexican Street Corn Seasoning, red onion, cotija cheese, and cilantro to the bowl. Toss to until everything is well combined. Taste and adjust the seasoning if needed. Garnish with additional cheese and cilantro.
