Gina Overshiner, and her husband, Tim, are on a mission to make vegan food delicious, familiar and fun while minimizing harm to the environment, health and others. Their food truck business, Gina’s Vegan A Go Go, specializes in vegan comfort foods made from scratch. They bring an impressive menu to the market every Saturday with a wide variety of food including vegan muffins, burgers, mac and cheese, burritos, biscuits and gravy, hummus and more!

In their free time, Gina and Tim enjoy biking and other activities that reduce environmental impact.

Thought to have originated in the Mediterranean region, dill has an ancient history in many countries as a medicinal and culinary herb. Grown in the spring, this herb is packed with antioxidant properties, Vitamins C and A to promote a healthy immune system and eye health, along with manganese and iron for bone health and energy production. Dill is also good for digestion and blood sugar regulation.

Of course, the most popular use for dill is in the brine of pickled cucumbers. But dill isn’t just for pickles; it’s a versatile herb that can be used in many different kinds of food. Fresh dill sprigs can be used on roasted vegetables, in a salad, or to season meat and fish dishes. Dried dill or crushed dill seeds give an aromatic flavor to soups and stews. Chopped fresh dill can be added to creamy salad dressing, potato salad, hummus, or even baked in bread to give it a more savory flavor!

🐞 BONUS: Ladybugs and other beneficial insects love dill and will help take care of those garden pests!

Storage Tips:
Trim the ends of the stems and place them upright in a glass with a little cool water. Loosely cover the leafy tops with a plastic bag or damp paper towel and store it in the refrigerator. Change the water every 2 to 3 days to keep the dill fresh for longer.
