AND IT’S BAKE DAY!!!

Loves are pulled from the fridge in the morning in batches of twelve, scored, and baked for a total of 30 minutes. Then left on a cooling rack to cool completely before packaging. (This is where self disappoint really comes in 😅, we try not to eat too many goodies when it makes the house smell soooo good!)

P.S. fresh goodies will be in the shop this afternoon!

Every loaf is weighed and pre-shaped. Once everything is weighed, it gets a bench rest for 15-20 minutes. Each loaf is then given its final shaping, tucked into a cotton basket and refrigerated for the night. All loaves do their final cold fermentation through the night and into the morning when they are baked!

Early in the morning all the mixing is started, then usually finished by noon-1pm, on a good day 😅.

Sometimes I catch myself just staring at the mixer as it does its job. There’s just something satisfying about it!

After everything is mixed, it all goes into bins to bulk ferment. Once everything is ready, it gets dumped and pre-shaped.

Did you know?

In order to actually make in on time, with my sanity…😅, to a Saturday morning market; the prep work actually begins on Wednesday! And that doesn’t even include going to get the ingredients! Jalapeños sliced, cheese shredded, cookies and pop tarts mixed, starter fed, and preparing for a long mix day on Thursday.
