I started my commercial cooking journey as a Sous Chef (black coat) under a very talented Chef. Then I moved on to compete with the guys for the white coat🤣. I did everything from meat cutting to seafood, wok cooking to baking, prepared food, and even sushi🤣🤣🤣. I was fierce. The only time I let my hair down and smiled was when I was alone in the bathroom in front of a mirror. Every part of that kitchen was tough. I finally got my white coat, and I never looked back on the food business. None of my academic degrees gives me the fulfillment that cooking does. These memories are brought to you by today's prepping process 🤣🤣🤣 picture in the comment section.
