Ground Beef Gyros with Tzatziki Sauce

Oh my goodness, these were so good!
Gyros were always one of my favorite county fair treats and earlier this month I had one at the Benton County Fair. It was really good but these are better and easier on the pocketbook. I’ll add the recipe in comments.

It’s that time of year! I raided the garden for garlic scapes, added some thinly sliced Flat Iron and had a delicious stir fry in under 30 minutes!
If you’re like me, always on the go and don’t always meal plan, a lot of our dinners are last minute and start with one or 2 ingredients and go from there. The Flat Iron was originally headed for the grill but we changed direction when I decided to add the garlic scapes and it didn’t disappoint. Flat Iron is amazingly tender in stir fry and perfectly complimented with the garlic scapes.

Pro tip! Before you head out for yardwork the next sunny Sunday, throw some Korean short ribs in marinade. 3-4 minutes a side on the grill when you’re done and dinner is ready. Your taste buds will thank you!!
