Watching somebody break down a chicken with a bread knife hurts a little bit 😂🔪🐔

Breaking down a chicken isn’t about cutting straight through everything in your way. A chicken already gives you natural places to separate it.

You’re looking for the joints.

Start by removing the legs and thighs, working your knife around the hip joint instead of hacking through the bone. Separate the drumstick from the thigh at the joint. Remove the wings the same way. Then work along the breastbone and rib cage to remove the breasts cleanly while leaving as little meat behind as possible.

A sharp chef’s knife or boning knife lets you follow the anatomy instead of fighting it.

And the carcass isn’t waste either. Save the backbone, wing tips, bones, and trim for stock.

Good butchery is about understanding where to cut, maximizing your yield, and respecting the ingredient.

Or you could grab a bread knife and start sawing through the entire bird like you’re cutting a sourdough loaf.

Please don’t do that. 😂

This is what actually goes into making our Cheeseburger & Muenster Sausage 🌭🔥

We start with quality beef, grind it down, and work bacon directly into the blend for extra richness and fat.

Then comes the good stuff.

🧀 Muenster cheese
🥓 Bacon
🧄 Whole garlic, slowly roasted and confited
🧅 Finely diced shallots
🌿 Our spice blend
🍺 A little beer to help everything come together

Once everything is mixed and properly emulsified, the sausage mixture goes into the freezer for several hours. Keeping everything cold is a huge part of getting the texture right. It helps the fat, meat, cheese, and liquid stay properly bound instead of leaving you with a greasy or mealy sausage.

Then we stuff it into natural hog casings and twist these things into some seriously BIG links. Ours are around 8 inches long and we definitely don’t under-stuff them 😂

It’s a long process for something that looks simple when it finally hits the grill, but that’s sausage making.

Good meat. Real ingredients. Proper technique. And absolutely no reason to make a boring sausage.
