The Senior Farmers Market Program is a federally funded initiative that currently awards low-income seniors $50 every year to spend on eligible produce at local farmers markets. A huge thank you to Dany Villarreal Martinez and Cincinnati Public Radio for shedding light on the critical state of the Senior Farmers Market Nutrition Program here in Northern Kentucky.

Programs like these are so much more than a food subsidy. They ensure our older neighbors have access to fresh, healthy produce, improve public health outcomes, and directly support our local farmers and markets. With funding delays and cuts making a hard impact this year, community awareness is more important than ever.

The Senior Farmers Market Nutrition Program was supposed to start this month, but Kentuckians still don't have access to funds, raising a question about federal funding amidst rising costs.

Let us share a little secret with you. Get some pappardelle pasta from Lexington Pasta on Saturday (or, let’s be real - just about any of their pastas will do). Pick up some dinosaur kale from Finney Family Farm. Go home. Get a pot of heavily salted water boiling. Blanch those kale stems for 5 minutes (yes, use the stems! That’s where all the calcium is!). Then, add the kale leaves, and blanch stems and leaves both for 5 more minutes. Meanwhile, heat 1/4 cup of olive oil and 3 or 4 smashed garlic cloves in a pan on low; when the oil begins to shimmer and the cloves start to bubble, turn off the heat. Once stems and leaves are blanched, put the stems, leaves, and olive oil + garlic into a blender, along with salt, pepper, parmesan (3/4 cup) and red pepper flakes (+ any fresh herbs in your fridge you may need to use up!). But don’t toss the boiling water! Use the same water to cook your pasta - since Lexington Pasta is fresh, it should only take 4 minutes. Blend kale et al until it is the consistency of pesto. By that point, your pasta should be al dente; drain pasta, return pasta to pot, and add pesto. I like to add a can of cannelini beans, to up the protein and fiber content, but I think frozen peas or chicken would be delicious additions, as well. Top with parmesan cheese. There you have it! A seriously delicious and nutritious meal using Covington Farmers Market staples 💚
