Yesterday, we said goodbye to Jim Williamson from Plain Nuts Deli & Catering. We are deeply saddened by this loss, a good man is gone too soon. He gave so much to the community and to me personally. I will miss him and his bright and generous spirit.

I truly enjoyed my time in the kitchen and at the front, working with the long-serving crew he had made into a family. I know he wanted to bring everyone back together after the fire, we all wanted that too. Now, we are left with memories and recipes and the tremendous impact he made. In these things, his team at the shop will carry on some part of his legacy.

I am grateful for what he left me so casually because of his big heart.... a chance to do something new that I love. Jim gave me the chance to try my hand at making fried pies. I was thrilled when he decided to put them on the menu. I really enjoyed making them. Jim would tease me a bit because I worked with a smile on my face, lost in my happy creation.

Those days were some of the best of my life. Simple, sweet, and good.

We wanted to give everyone an update on Plain Nuts. We are still in the process of undergoing inspections and assessments. We expect that our part of the building will need to have the ceilings and probably the roof replaced as well as the floors. We will have a plan once we know the full extent of the repairs.

This means that we will be closed for a month or more. We will keep the community updated on our progress. We are all eager for the day when we can open our doors again.

We will not be keeping all catering appointments, sadly.

Thank you to all of our lovely friends and neighbors for all of your prayers and support.

As you all know, our hometown square was hit by fire last night. All of us at Plain Nuts are devastated over the losses to Shear Bliss Hair & Beauty Salon , Shelvie Jean , New Shoez, and The Dude Store. We are keeping them in our prayers.

We are grateful to the amazing firefighters from all jurisdictions for their heroic work in fighting and extinguishing the fire. We were spared fire damage, but did take water and smoke damage.

The deli will be temporarily closed while we assess the damage and clean up. We will be able to keep our catering appointments.

Thank you to our neighbors and friends for all your prayers and support, let's join together and help our Covington small businesses rebuild and recover.

We will let you know how we are doing along the way.
