My Oyster Rockefeller Recipe 🦪🔥🔥🔥

Ingredients
• 2 dozen fresh oysters, shucked (retain the bottom shell)
• 4 tbsp unsalted butter
• 2 cloves garlic, minced
• 2 cups fresh spinach, chopped
• 1/4 cup parsley, chopped
• 1/4 cup green onions, chopped
• 1/2 cup breadcrumbs
• 1/2 cup grated Parmesan cheese
• 1/2 cup heavy cream
• 2 tbsp Pernod or anisette liqueur (optional)
• Dash of hot sauce
• Salt and pepper to taste
• Lemon wedges for serving
• Rock salt for baking tray (optional, to stabilize the shells)

Instructions
1. Prepare the Oysters:
• Preheat your oven to 450°F (230°C).
• Arrange the oyster shells on a baking sheet lined with rock salt to keep them steady.
2. Make the Filling:
• In a skillet, melt the butter over medium heat.
• Add garlic and sauté until fragrant.
• Stir in spinach, parsley, and green onions, cooking until the spinach is wilted.
• Add breadcrumbs, Parmesan cheese, heavy cream, Pernod (if using), hot sauce, and season with salt and pepper. Mix until combined and the mixture thickens slightly.
3. Assemble:
• Spoon the prepared filling onto each oyster in the half shell, covering the oyster completely.
4. Bake:
• Bake the oysters in the preheated oven for about 8-10 minutes or until the topping is golden and bubbly.
5. Serve:
• Serve immediately with lemon wedges for squeezing over the top.
