INGREDIENTS
1 ½ to 2 pounds boneless, skinless chicken thighs or breasts
Kosher salt and black pepper
⅓ cup mayonnaise
1 tablespoon lime zest (from about 2 limes), plus lime wedges, for serving
1 tablespoon finely grated fresh ginger (from a 3-inch piece of peeled ginger)

PREPARATION
Pat the chicken dry and season all over with 1 1/2 teaspoons salt. In a medium bowl, stir together the mayonnaise, lime zest and ginger; season with salt and pepper. Add the chicken to the mayonnaise mixture and stir to coat. (The chicken can sit in the marinade for up to 8 hours in the fridge. Let come to room temperature before cooking.)
To grill: Heat a grill to medium-high. Grill the chicken over direct heat until cooked through and juices run clear, about 5 minutes per side for thighs and about 4 minutes per side for breasts, turning as necessary to avoid burning.
To cook in a skillet: Heat a large skillet over medium-high. Cook the chicken until juices run clear, about 5 minutes per side for thighs and about 4 minutes per side for breasts.
Serve chicken with lime wedges, for squeezing on top.

▢1/4 cup honey
▢3 tablespoons soy sauce
▢1 lime , zested and juiced
▢5 chicken thighs , bone in and skin on

Instructions
Pre-heat the oven to 375 degrees.
Add all the ingredients to a bowl or plastic bag and mix them together well.
In a large cast iron or oven ready skillet add the chicken on medium high heat and brown with the skin side down for 3-5 minutes.
Flip the chicken over so the skin side is up.
Add on the remaining marinade and roast in the oven for 30-35 minutes.

Ingredients

4 medium boneless skinless chicken breasts
1 Tablespoon oil of choice
1/4 cup finely chopped onion
2 cloves garlic crushed or minced
1 cup chicken broth water can also be used
Juice of 1 lime or 2 tablespoons
2 tablespoons cilantro chopped cilantro
1/2 teaspoon red pepper flakes
salt and pepper to taste
1/2 cup heavy cream or half and half or sour-cream or greek yogurt
Instructions

In a large heavy-duty skillet, heat the oil over medium-high heat. Season chicken generously with salt and pepper then add the chicken and cook for 7-8 minutes, turning once or until chicken is cooked through. Remove chicken from skillet and cover with foil on a separate plate, set aside.
Add onions to the same skillet (without washing it) and cook onion for 1 minute. Add garlic and cook for just 30 seconds. Add chicken broth, lime juice, cilantro, red peppers flaked, and salt and pepper to taste. Bring to a gentle boil for 8-10 minutes or until liquid is reduced by 1/4 cup.
Whisk in cream during the last minute. Turn off heat and return chicken to the sauce. Garnish with more cilantro. Serve with aside of steamed veggies or rice. Enjoy!
