1. 1 3/4 pounds boneless, skinless chicken breasts (about 3 medium breasts)
2. 1 batch best Chicken Marinade* (see notes)
3. Chopped fresh herbs (crumbled feta cheese, a squeeze of lemon juice, optional for serving)

Ingredients
2 tbsp. honey
2 tbsp. low sodium soy sauce (GF if needed)
2 tbsp. lime juice
2 tsp. Sriracha (more to taste)
2 tsp. rice vinegar
2 garlic cloves, minced
1.33 lbs. chicken breast, cut into strips

Instructions

Mix together the honey, soy sauce, lime juice, sriracha, rice vinegar, and garlic. Marinate the chicken in this mixture for at least 3 hours, ideally overnight.

When ready to cook, preheat the grill over medium heat. Cook the chicken for 4-6 minutes per side or until fully cooked through.

Ingredients

For the chicken
2 cups buttermilk
12 ounces IPA beer
2 teaspoons kosher salt
1 teaspoon smoked paprika
1/4 teaspoon cayenne
1/2 teaspoon cumin
1 tablespoon brown sugar
1 white onion, sliced
2 pounds chicken drumsticks and wings
Cilantro, finely chopped

For the glaze
1/4 cup sriracha
1/3 cup brown sugar
1 teaspoon salt
2 cloves garlic, minced
1/4 cup tomato paste
1/2 cup IPA beer
2 tablespoons fish sauce
1/3 cup miring

Directions
For the chicken
In a large bowl, whisk together the buttermilk, beer, salt, smoked paprika, cayenne, cumin, and brown sugar. Add the onion and chicken. Cover and place in the refrigerator for at least 6 hours.

For the glaze
When you’re ready to grill the chicken, make the glaze. In a saucepan set over medium-high heat, whisk together all the glaze ingredients. Bring to a boil, stirring frequently, until thickened, about 8 minutes.

Remove the chicken from the marinade, and discard the remaining marinade.

Heat the grill. Place the chicken on the grill, brush with the glaze, and cook for about 2 minutes. Flip the chicken, and brush the other side with glaze. Continue to flip and brush with glaze every 4 minutes, until the chicken is cooked through, about 20-25 minutes. Transfer chicken to a serving platter and sprinkle with chopped cilantro.
