Watch the cheesemakers and buy their cheeses in their retail shop. From her love of Italy Paula Lambert built a business that has flourished for 39 years. In the late 1960’s Paula spent five years in Italy studying Italian an art history, and she was smitten with everything Italian. Once back in Texas she wanted to find a way to return to visit Italy more often, so she decided to create a business
that would afford her this wish. She decided that the business should focus on the something she loved … and that was food, specifically fresh mozzarella so she could have her beloved Insalata Caprese in Dallas. She named her business Mozzarella Company and began producing handmade fresh mozzarella. This cheese led to travels and other cheeses and eventually to two cookbooks. Ultimately it has resulted in Paula’s new company Viaggi Deliziosi … Paula takes friends to spend weeks in a Tuscan villas exploring the food and culture and wines she loves so dearly.
