Ingredients
3 kg whole salmon , from sustainable sources, ask your fishmonger, scaled, filleted and pin-boned, or use 2x1.2kg sides of salmon fillet
8 sprigs fresh rosemary
extra virgin olive oil
FOR THE DILL YOGHURT
500 g fat free natural yoghurt
1 bunch fresh dill , chopped
1 lemon , juice and zest of

Method
This is an easy way of cooking whole salmon fillets. It’s simple to serve and just as good cold as it is hot. If you’re not sure how to prepare the fish, get your fishmonger to do it for you. I’ve cooked it on a wooden plank in my outdoor wood-fired oven, but you can cook it in a large roasting tray in the oven.
Preheat the oven to 200ºC/400ºF/gas 6. Place the salmon fillets skin-side down in a large clean roasting tray – cut each in half if they don’t fit. Lay the rosemary on top and drizzle with olive oil. Gently rub the oil and rosemary all over the fish, and season. Bake for 20 minutes or until just cooked. (Alternatively, place on a clean smooth wooden plank and cook in an outdoor wood-fired oven for 20 minutes.)
Meanwhile, mix the yoghurt and dill with the grated zest of the lemon, a few drops of juice and season. Cut portions of salmon off the skin and serve with the Italian farro salad.

¼ cup Wattie’s Creations Hoisin Sauce
2 2 Tbsp Wattie’s Creations Sweet Chilli Sauce
3 1 tsp fresh ginger, finely grated
4 750 g chicken nibbles
5 1 Tbsp sesame seeds, toasted* (optional)
6 Thai basil or coriander leaves, to garnish (optional)
Step 1
In a large bowl, mix together Wattie’s Hoisin Sauce, Wattie’s Sweet Chilli Sauce and ginger. Add chicken nibbles and toss to coat. Cover. Refrigerate for 30 minutes to allow chicken to marinate.
Step 2
Preheat oven to 190°C (fan assisted).
Step 3
Place chicken nibbles in a single layer on a baking tray lined with baking paper. Bake for 25-30 minutes or until chicken is cooked. Garnish with toasted sesame seeds and Thai basil or coriander before serving, if wished.

1 whole chicken (about 3 to 4 lbs/1.5kg
½ tsp salt
½ tsp ground pepper
2 tbsp hoisin sauce
2 tbsp honey
1 tbsp sesame oil
1 tbsp sesame seeds (toasted)
INSTRUCTIONS


Cut chicken into 8 to 10 pieces. Trim off excessive fat. Place on a baking tray. Sprinkle salt and pepper on both sides of chicken pieces.
Preheat oven to 350°F (180°C).
Combine hoisin sauce, honey, and sesame oil in a small bowl. Brush or spoon the sauce on both sides of chicken pieces.

Bake chicken for 45 minutes.
Remove chicken from oven and transfer chicken pieces to a plate. Strain the juices into a small saucepan. Place the chicken back onto the baking tray and cover with aluminum foil. Reduce oven temperature to 325°F (165°C).

Boil the juices until it is thick and syrupy.

Brush or spoon onto chicken pieces. Sprinkle with toasted sesame seeds.
Return chicken to the oven and continue to bake for another 15 minutes.

Remove and serve immediately.
