Ingredients
2 fillets of mackerel, from sustainable sources
2 large free-range eggs
2 large slices of soda bread
extra-virgin olive oil
red wine vinegar
a few fresh chives

Method
Bring 2 pans of salted water to the boil and preheat your grill.
Place your mackerel fillets in 1 pan and poach for 4 to 6 minutes, or until just cooked.
Poach the eggs in the other pan for 3 minutes for a slightly runny yolk, or to your liking.
Toast the soda bread, then drizzle with a little oil.
Place on a plate and top with the mackerel, a splash of vinegar and a poached egg. Season well, then finely chop and sprinkle with chopped chives.

Ingredients
1 pound Cauliflower Florets
3 tablespoons Olive Oil
1/2 teaspoon Salt , see note 1
1/4 teaspoon Black Pepper
1.5 teaspoons Paprika , see note 2
Instructions
Preheat oven to 400° Fahrenheit (200° Celsius).
Divide cauliflower into bite-size florets. Place them in a large bowl and drizzle with olive oil. Sprinkle with salt, pepper and paprika. Toss well – until all the florets are well coating in the mixture.
Transfer the cauliflower florets onto a baking sheet and bake for about 30 minutes or until lightly browned and tender when pierced with a fork (or do a taste test). Make sure to toss them around once or twice during the cooking.

1 large head cauliflower , cut into florets (see my easy method)
2 1/2 tbsp olive oil
1/2 tsp each salt and pepper
2 garlic cloves , finely minced
1 tbsp parsley , roughly chopped, for sprinkling (optional)
PARMESAN FLAVOUR OPTION:
2 tbsp parmesan , finely grated (store bought, sandy type)
3 tbsp panko breadcrumbs
Instructions

Preheat oven to 220°C/425°F (200°C fan).
Toss cauliflower in a large bowl with oil, salt, pepper and garlic if using. (You can do this on the tray, but you’ll need more oil). Add parmesan and Panko breadcrumbs at this point, if using.
Spread on tray. Roast 20 minutes. Flip cauliflower, roast a further 5 minutes until you have golden edges and it’s soft all the way through.
Serve immediately, sprinkled with parsley if using.
