Skirt Steak with Chimichurri Sauce

Ingredients
Skirt Steak:

1 lb. skirt steak
salt & pepper to season
Fresh Chimichurri Sauce:

1 cup fresh cilantro, chopped
1/2 cup fresh flat-leaf parsley, chopped
1/4 cup fresh oregano, chopped
2 garlic cloves, minced
1/4 cup red wine vinegar
3/4 tsp. red pepper flakes
juice of 1 lime
1/2 cup olive oil
Instructions
Chop up flat leaf parsley, cilantro, oregano, and garlic cloves.
Put this in a food processor. Add red wine vinegar, juice of 1 lime, red pepper flakes, and salt & pepper. Pulse a couple of times to roughly chop.
Slowly add olive oil and pulse a few more times.
Put chimichurri in a bowl and set aside.
Next, generously season both sides of skirt steak with salt, & pepper.
Place on a medium-high grill and grill each side for 3-4 minutes. {these cook fast so keep an eye on them}

At the end of the day, fruits are very nutritious, but they don't contain any essential nutrients that you can't get from other foods, like vegetables

Fats consumed should be less than 30% of your total energy intake. This will help prevent unhealthy weight gain and NCDs. There are different types of fats, but unsaturated fats are preferable over saturated fats and trans-fats. WHO recommends reducing saturated fats to less than 10% of total energy intake; reducing trans-fats to less than 1% of total energy intake; and replacing both saturated fats and trans-fats to unsaturated fats. The preferable unsaturated fats are found in fish, avocado and nuts, and in sunflower, soybean, canola and olive oils; saturated fats are found in fatty meat, butter, palm and coconut oil, cream, cheese, ghee and lard; and trans-fats are found in baked and fried foods, and pre-packaged snacks and foods, such as frozen pizza, cookies, biscuits, and cooking oils and spreads.

Roasted black bean burgers

Ingredients
1½ red onions
200 g mixed mushrooms
100 g rye bread
ground coriander
1 x 400 g tin of black beans
olive oil
40 g mature Cheddar cheese
4 soft rolls
100 g ripe cherry tomatoes
1 lime

Preheat the oven to 200ºC/400ºF/gas 6.
Peel 1 onion, place in a food processor with the mushrooms, rye bread and 1 teaspoon of ground coriander, and whiz until fine.
Drain and pulse in the black beans, season lightly with sea salt and black pepper, then divide into 4 and shape into patties, roughly 2.5cm thick.
Rub all over with oil and dust with ground coriander, then place on an oiled baking tray and roast for 25 minutes, or until dark and crispy, topping with the Cheddar and warming the rolls for the last few minutes.
Meanwhile, peel and very finely chop the remaining onion with the tomatoes and place in a bowl. Squeeze over the lime juice, add a few shakes of Tabasco and season to taste. Destone, peel and finely slice the mango and avocado.
Halve the warm rolls and divide the yoghurt between the bases, followed by half the salsa, the mango, avocado and coriander leaves. Top with the burgers, remaining salsa and extra Tabasco, pop the lids on and press down lightly. Always nice with oven-roasted, skin-on chips.
