What keeps growing when the Texas heat takes over? ☀️🌱

We visited farmer Aaron Reeves at Farmer Aaron in Princeton, Texas, where okra has been part of the story since 2006. What started with eight acres has grown into more than 50 acres of fruits and vegetables—with roughly 16 acres dedicated to okra this year.

“I haven’t found anything that’s as productive,” Reeves says. “It just keeps going.”

Okra loves the heat. Its deep taproot helps it reach moisture in the soil, making it particularly suited to long Texas summers. In the kitchen, its mild, grassy flavor falls somewhere between green beans and eggplant, while its natural mucilage lends itself to everything from stews and gumbos to other preparations.

But green okra is only part of the story.

This year, Aaron is also growing an Indian variety commonly known as bhindi or vendakkai. The plants stay smaller, while the pods grow thinner and more tender, with a delicate skin and less of the woody texture Aaron sees in traditional green okra.

The connection is personal. Aaron first traveled to India through Hope’s Gate and spent his downtime exploring local markets and food. “I’ve always liked different cultures,” he says. “I’m a foodie. I probably gained about five pounds there.”

Now, that experience has found its way back to his fields in Princeton.

“It holds up better,” Aaron says of the Indian variety. “You know how okra can turn black? These, I’ve seen go a week and still look great.”

Thanks to Aaron and the Reeves family for taking us into the fields and sharing their story. 🙌

Green okra is available! Item #12613.
