These are not sale barn pigs brought home and fed for a few days! These are grain finished pigs that were raised and finished by a local "bordering county" farmer. We are privileged to be a just small part of keeping Madison County beef in Madison County! Apart from meat processing, we also offer beef shares, pork shares, and pasture raised chickens in efforts to put fresh local meats in the hands of our communities. Buy local every chance you get!

With the recent events and policy changes regarding imported beef, we wanted to give you some facts so that we as a community can better understand the issues with the beef market, and how we as a community can support our beef producers.

The USDA Census of Agriculture recorded 20,457 head of cattle and calves in Madison County.

Annually: $5.9 million generated from gross cattle sales, not income.

Yields more than 24 million retail servings of beef annually.

The problem- over the past couple of years, higher input costs have driven farmers to make difficult decisions to thin out herd numbers based on the costs of feeding them. In years past, there has been more balanced input prices vs. market price for beef. Therefore, keeping our herd numbers stable.

For many cow-calf operations, grazed and harvested feed makes up 40-70% of annual cow costs. The value of grazed feed was higher in 2025, while harvested feed prices decreased. With that budget, when all pasture and feed are valued at market price, that is pushing $800 per cow unit annually. With those input costs rising to raise cattle in our community, it has led more farmers to sell heifers, instead of keeping them to grow the herd.

To put that in perspective, in 2019 the US beef cow inventory peaked around 31.7 million head. Today that number is around 27.6 million, which is one of the lowest inventories since 1948.

Solution: Support your local farmers! Many cattle producers in our community are now processing their own beef for sale to the community. Reach out to them and see what they have to offer. It’s always better know to where your food comes from! If you live in Madison County and know a producer that sells the public, tag them!

We work hard to keep our prices as affordable as possible, but we have made a few necessary adjustments for this season. We’re also excited to introduce our delicious smoked bologna to this year’s menu.
Be sure to stop by our Opening Day event and enjoy complimentary samples while supplies last!
We are looking forward to an excellent season with a larger team than last year, an improved workflow, and slightly faster turnaround times. While we are committed to providing efficient service, we take pride in the quality of our work and are not a high-volume, "turn-and-burn" operation.
