We promised a new chapter for The Truffle Cheese Shop. 🧀

We’re excited to share that Truffle has found its new home at Denver’s historic Evans School Denver Evans School — and we’re working toward reopening the retail shop by the holidays.

Thank you to BusinessDen for the coverage and The Denver Post for sharing the news and helping us tell the story of what comes next.

While we build out the new shop, Truffle is still busy making platters, hosting events, and bringing back our cheese-making classes.

We can’t wait to welcome you into the new space.

Follow along here for opening updates, classes, events, and a behind-the-scenes look at the road back to retail.

They say "April showers bring May flowers," but if you're like us, you might be looking around wondering where all that April rain went! Despite the sneaky lack of showers, we are bringing the bloom with a May Flowers theme for our Monthly Cheese Club.

This month is a celebration of the vibrant, herbaceous, and downright floral flavors that define springtime grazing. We are bringing the garden to your table, featuring cheeses that either come from the milk of animals that graze in high-alpine meadows or are literally adorned with edible flowers to ring in the warmer season.

A sneak peak about what is included this month: meet Alp Blossom! Alp Blossom may be the ultimate showstopper of the floral-cheese world. Made in the Allgäu region of Germany from cow’s milk, this semi-hard Alpine cheese is aged for several months and then coated with a colorful mix of dried flowers and herbs. Floral but not sweet, if a cheese could wear a flower crown and hiking boots at the same time this would be the one. Find out more by joining The Club! 🌼 🧀 🌺 🧀

To Eat or Not to Eat: The Cheese Rind Question
A Quirky Guide to the Mysterious World of Cheese Coats
Ever gazed at the edge of your cheese and wondered if that peculiar layer is edible, or just a fancy protective shell? Cheese rinds are more than just decoration; they're the result of careful aging, washing, and sometimes even a bit of artistry. They play a major role in developing flavor, texture, and even aroma, so don't dismiss them too quickly. From rustic rounds to dainty wedges, the rind often tells a story about the cheese’s journey from milk to masterpiece.
Imagine you're at a party, holding a gorgeous wedge of brie in one hand and a cracker in the other. Suddenly, panic strikes: Can I eat the cheese rind, or will I instantly become a social pariah??

Read the entire blog on our website!

Store Update: A New Chapter for The Truffle
Over the past few years, operating a specialty food business—particularly one that relies on
imported products—has become increasingly complex. Rising labor and operating costs led us to
close our original storefront while continuing to serve customers in other ways.
The Truffle remains active.
We continue to fulfill online orders and offer our signature platters and gift boxes, along with
catering, private events, and educational experiences. These areas remain central to how we
operate today and to how we serve our community.
We are actively searching for our next retail location. While timing and location are still being
finalized, the direction is clear: our next space will be designed to better support custom platter
offerings, events, and education, and will allow us to expand our in-store product selection once
we reopen.
Looking ahead to 2026, we plan to offer more events, tastings, and catered experiences as we
continue building the business back thoughtfully and sustainably.
We are incredibly grateful for the continued support, patience, and encouragement we’ve
received during this transition. Your loyalty, kind messages, and ongoing engagement mean more
to us than we can adequately express, and they continue to shape what The Truffle becomes next.
