Recipe of the Week:
Maytag Blue Cheese
Patriotic Potato Salad
Prep Time: 25 minutes Cook Time: 15 minutes Serves: 10-12

1 cup scallions (white and green parts),
chopped
1 cup sour cream
½ cup mayonnaise
¼ cup white wine vinegar
4 t Dijon mustard
2 t sugar
2 t salt
1 t ground black pepper
2 lb small red-skinned and blue (purple)
potatoes
1 lb unpeeled small white potatoes
1 cup frozen peas, thawed
1 ½ cups crumbled Maytag blue cheese

1. Whisk together sour cream, mayo, vinegar, mustard, sugar, salt and pepper with ½ cup of
green onions. Cover and chill (can be prepared up to 24 hours beforehand.)
2. Boil potatoes in a large saucepan for 10-15 minutes until tender. Drain and cool.
3. Cut potatoes in halves or quarters, and place in a large bowl with dressing, thawed peas and
blue cheese. Chill for at least 2 hours.
4. Before serving, sprinkle with smoked paprika and remaining chopped green onions.

Recipe of the Week:
Grilled Summer Fruits with Mascarpone Cream
Prep Time: 20 minutes Cook Time: 5 minutes Serves: 6-8

1/3 cup Mascarpone cheese
3 T plain Greek yogurt
2 t sugar
1 t chopped fresh tarragon
4 firm plums, peaches or nectarines
1 T canola oil
8 t balsamic glaze or honey
2 T sliced almonds, toasted

1. Preheat grill to medium to high heat.
2. In a bowl, combine mascarpone, yogurt, sugar and 1 teaspoon of tarragon. Chill for at
least 30 minutes.
3. Cut fruit in half and carefully remove pits. Brush the cut sides with oil.
4. Before grilling, brush grill racks with remaining oil. Grill fruit, cut side down for 2-3
minutes.
5. Quickly grill on other side to warm, about 1 minute.
6. Move grilled fruit to plate. Fill each half with 1 tablespoon of mascarpone filling and
drizzle with balsamic glaze or honey.
7. Top with toasted almonds, remaining tarragon or powdered sugar, and enjoy

Mascarpone – Mascarpone is made from cow’s
milk and features a light taste with a slight
tang, with a rich, silky texture. The cream
is churned like butter and then drained for
a thick, luxurious feel.
Mascarpone is known as the cheese that defines Tiramisu.

Recipe of the Week:
Potato, Chorizo and Cheese Omelette
Prep Time: 25 minutes Cook Time: 15 minutes Serves: 6
4-6 small potatoes
½ T salt
½ T freshly ground black pepper
8 eggs
4 oz chorizo sausage
3 oz Dorothea Potato Goat Cheese
½ T fresh rosemary, finely chopped
1 T olive oil
½ c fresh flat-leaf parsley, roughly chopped
1. Preheat oven to 450 degrees F. Put potatoes into a small saucepan filled with cold salted
water and simmer until cooked, about 15 minutes. Drain and set aside to cool.
2. Once potatoes are cooled, slice thinly (no more than ¼-inch), or use a mandolin. Slice
chorizo to ½-inch thickness.
3. Beat eggs in a large bowl with salt and pepper. Add cheese and mix.
4. Heat a large, non-stick, ovenproof frying pan. Add the chorizo and potatoes, and cook
until lightly fried, about 5 minutes.
5. Remove from pan, and add rosemary so it starts to crisp. Immediately add in egg mixture,
letting it set for 1 minute.
6. Then add chorizo on top first, followed by the potato slices. Drizzle with a bit of olive oil,
and place pan in the preheated oven.
7. Cook until top is golden brown, between 10-15 minutes, until the middle has set.
8. Top with chopped parsley and enjoy!
