Corridor Sausage is back in stores!

I am thrilled to announce that you can find 'Detroit's best sausage" again in retail outlets across Michigan!

While our business never truly went away, we've spend the last few years largely focused on keeping Corridor Sausage products on the menus of our loyal restaurants, cafes and bakery customers.

I bootstrapped this business in a small rental kitchen, hustling to get the word out at farmers markets and pop-ups. From those humble beginnings, Corridor opened our own USDA-approved production factory in Eastern Market and began shipping thousands of pounds of sausage to hundreds of stores and restaurants across the Midwest and East Coast. Growing this business with no outside investment was the ride of my life -- it was also a tremendous struggle. Having enough cash flow to keep the lights on, finding and training team members to produce our artisan products, having to invest tens of thousands of dollars in new equipment every time we leveled up. And then COVID-19 happened, leading me to suspend retail operations while we struggled to serve our loyal food service clients.

I don’t want to rehash all the panic and the sleepless nights of that period. All I can say, looking back, is that we were lucky to survive it. In August 2020, Corridor signed a transformational distribution partnership with Grobbel's Gourmet, a 140-year-old meat processor and our neighbor in Eastern Market neighbor. It's because of them that we have been able to keep Corridor Sausage alive and sign these new deals to get our beloved sausage product back onto the streets.

Thank you to Jason Grobbel and the entire EW Grobbel team, as well as our communities in Eastern Market and the Detroit food scene for always having our backs. Thank you to our distributor, Cherry Capital Foods, for being a great partner through this new period of exciting growth. Thank you to my wife, Ashley and our children Desmond and Amelia, for believing in me throughout everything.

Most of all, thank you to the thousands of Corridor Sausage fans who continued to support us through the years and still reach out every week asking where to shop for our sausage. Your loyalty made fighting through all of these challenges worth it. For all of you, here are all the stores where you can shop Corridor Sausage -- with many more to come soon. It's more important now than ever to and -- please support these fantastic retail locations who are helping us build the future of Corridor Sausage!

Sincerely,
Will, owner Corridor Sausage

We have been pretty silent lately. To be honest, the stresses of running a food manufacturer had become overwhelming and it became harder to see the future. Then COVID19 hit and we saw everything we had spent 11 years building slowly disappear. Well, we finally have some exciting news - we are very announcing that we are entering into a new partnership with EW Grobbel, and I have accepted a position as the director of culinary development. I am beyond excited for this as I will be heading up a new department for a company roughly 100x bigger than my own. For everyone who has been looking for our product on shelves, we just ask that you be a little more patient. Exciting things are coming and I cannot wait for what comes next.

E.W. Grobbel Sons Inc. is planning an expansion in Detroit's Eastern Market area. The 137-year old corned beef meat processor is nearing a deal to secure roughly 100,000 square feet of real estate to open a "culinary development center" where it will work to develop prepackaged or partially…

This chickpea stew has Catalonian origins and is DELICIOUS on a snowy day. We made this recipe at home this weekend with our Corridor Sausage chorizo! Highly recommend with some sour cream or coconut milk to cool off the heat!

This stew, like all those in Catalonia, starts with a sofrito, a thick sauce made with sautéed onions and tomatoes. Once you get all the ingredients i...

There are likely only a few weekends of grilling left before the snow begins to fall! We suggest watching this weekend's football games (or re-bingeing The Office, you do you!) with a grilled Corridor dog or two!

The Charlevoix is one of our favorite places to grab a delicious meal and a drink -- and we're so grateful that our Vietnamese chicken sausage got a shout out in this terrific review from Detroit Metro Times!

OK... now we're getting hungry...

Eating at the Charlevoix was a happy surprise: It feels like a down-to-earth neighborhood place — when I went on a Monday, just the bar...

At one point in this interview, the writer asked how I could start a business even though my degree was in English. I explained that no one I know really works in the field they went to school for. I think I crushed a little bit of her spirit and also felt super old.
