One Pan Cabbage & SausageπŸ₯˜πŸ’•

So delicious and comforting that the family will enjoy!πŸ’•

Total Time: 45 minutes

Servings: 3-4

Ingredients:

2 tablespoons olive oil, 1 tablespoon butter,1 lb. smoked sausage(kielbasa, sliced into coins, 1/2" thick), 1/2 yellow onion(sliced), 8 cups chopped green cabbage (about half of 1 medium cabbage), 3 cloves garlic(chopped), 1 tablespoon salt(plus more to taste), 1/2 teaspoon ground black pepper(plus more to taste), 1/2 cup chicken stock, 2 tablespoon chopped fresh parsley(optional), grainy mustard and/or sour cream(optional for serving)

Cooking Instructions:

1. Heat a large skillet over medium-high heat. Heat the olive oil and butter until melted well. Add the sausage and cook while stirring occasionally, for 5 minutes until golden brown on both sides. Remove the sausage leaving the oil in the pan and set aside on a plate.

2. Add the onion to the skillet and cook for 5 minutes until slightly softened. Add the cabbage, garlic, salt, pepper, and cook for 8 minutes until the cabbage is wilted.

3. Return the sausage to the skillet and stir all together. Add the chicken stock. Cover and reduce the heat to medium low heat. Let cook for 20 minutes. (Do not stir or uncover)

4. Stir in the parsley(if using) and season with more salt and pepper to taste. Serve with grainy mustard or sour cream.

Flavorful, juicy, and tender meal that the family will love! πŸ’•

Cook Time: 4 hrs & 15 minutes

Total Time: 4 hrs & 30 minutes

Servings: 6

Ingredients:

Salt and freshly ground black pepper, 1 3- to 5lb chuck roast, 2 or 3 tablespoons olive oil, 2 whole onions(peeled and halved), 6 to 8 whole carrots(unpeeled, cut into 2-inch pieces), 1 cup red wine(optional), 3 cups beef broth, 2 or 3 sprigs fresh rosemary, and 2 or 3 sprigs fresh thyme.

Cooking Instructions:

1. Preheat the oven to 275 degrees F. Generously salt and pepper the chuck roast.

2. Heat the olive oil in large pot over medium-high heat. Add the halved onions to the pot while browning them on both sides. Remove the onions to a plate.

3. Throw the carrots into the same very hot pot and toss them around a bit until slightly browned, for about 1 minute. Reserve the carrots with the onions.

4. If needed, add a bit more olive oil to the very hot pot. Place the meat in the pot and sear it for about 1 minute on all sides until it is nice and brown all over. Remove the roast to a plate.

5.On high, use either red wine or beef broth (about 1 cup) to deglaze the pot, while scraping the bottom with a whisk. Place the roast back into the pot and add enough beef stock to cover the meat halfway.

6. Add in the onions and the carrots, along with the fresh herbs. Put the lid on, then roast for 3 hours for a 3-pound roast. For a 4 to 5-pound roast, plan on 4 hours. The roast is ready when it's fall-apart tender.

One Pan Stuffed Peppers πŸ₯˜πŸ’•

Flavorful and delicious meal that is perfect for the family!

Prep Time: 20 minutes

Total Time: 1 hour & 30 minutes

Servings: 6

Ingredients:

2 tbsp extra-virgin olive oil (more for drizzling),1 medium yellow onion(chopped), 3 cloves garlic(finely chopped), 2 tbsp tomato paste, 1 lb ground beef,1 1/2 cups cooked white or brown rice, 1 (14.5 oz.) can diced tomatoes, 1 1/2 tsp. dried oregano,Kosher salt, freshly ground black pepper, 6 bell peppers(tops and cores removed), 1 cup shredded Monterey jack, and chopped fresh parsley (for serving).

Cooking Instructions:

1. Arrange rack in center of oven and preheat to 400Β°. In a large skillet over medium heat, heat oil. Cook onion, stirring occasionally about 7 minutes. Stir in garlic and tomato paste and cook, while stirring, until fragrant, about 1 minute. Add ground beef and cook, breaking up meat until no longer pink, for about 6 minutes.

2. Stir in rice and diced tomatoes while seasoning with oregano, salt, and pepper. Let simmer, stirring occasionally until liquid has reduced slightly for about 5 minutes.

3. Arrange bell peppers cut side up in a 13" x 9" baking dish and drizzle with oil. Spoon ground beef mixture into each pepper. Cover baking dish with aluminum foil.

4. Bake peppers until tender for about 35 minutes. Uncover, sprinkle with cheese, and continue to bake until cheese is bubbly for about 10 minutes additional.

5. Top with parsley before serving and serve immediately.
