What Are Garlic Scapes?
Garlic scapes are thin, vibrant green stalks growing from the garlic bulb. They are long, curvy, and resemble a cross between chives and scallions. The stalk of the garlic scape often includes a bulge at the end, which is actually a bud; if left on the bulb, it would flower. In the past, garlic scapes were simply discarded by farmers to allow the garlic plant to channel all its energy into the bulb. However, in recent years, they have become a culinary force in their own right, sold by the bunch at farmers' markets during the short season between spring and summer.
