As some of you have probably noticed, there have been a few changes in the meat department over the last few weeks. I've been in the process of changing over the beef I use, from select grade to Certificate Angus Choice beef. This is due to the lack of lean cattle in the market and the majority of the lean cattle that is available, is coming out of Mexico and Argentina. This is to try and bring down the cost of beef at the retail level, but it has not made much of a difference. The quality is what has suffered. So I made the decision to change to a higher quality, USA born, raised and processed product. If we're going to spend the money anyway, I'd rather spend that money supporting our local ranchers. I have also integrated retail ready (packer cut) bone-in pork. I've been struggling with some back/health issues for the last 2 years now, and I'm unable to saw like I used to. The bone-in chops, pork steaks, ribs and T-bones are cut from the same facility that I get my whole loins and butts from that I would saw in-house. I just let them do the sawing now. All of that said, I've got some really great prices on some really great looking steaks for the 4th. The Ribeyes and KC's are especially tasty lookin for sure.
