This three point muscle is from the bottom sirloin and gets moderate use for big flavor - this cut is a roast that eats like a steak!

Great for quick cooking (45mns) or slow smoking(a few hours), a Tri tip has a fat cap, dense muscle structure and great steak-y chew.

If cooking for a crowd - this piece can be cooked whole (to reach 120 degrees in the thickest part) and the tip will be medium well and pleases different kinds of meat eaters’ preferences!
