Hey IJ fans! IMPORTANT ANNOUNCEMENT!!!
A couple of you have let me know that you've had some of your jerky show signs of mold after a couple weeks of it being opened. My jerky has virtually no preservatives (other than the cure used to make it jerky). As a result, it's not like the stuff you buy at your local convenience store that lasts forever. It's more like buying a loaf of bread. I vacuum seal it when I make it, but once it's opened, it's best eaten within a week or so.
This is by design. My jerky is hand made when you order it, it's vacuum packed the same day, and usually shipped within 48 hours. I make my product with the mindset that you've come into a restaurant and ordered jerky. It arrives at your "table" fresh for you to eat.
My goal is to give you the best, freshest tasting jerky you can buy. With that comes limitations. I take a great deal of pride in what I make and send to you. I ask that you please eat my product in the same spirit that I make it -- a fresh, hand made, preservative free product best eaten shortly after you open it!
