Peaches with a purpose 🍑

For the 13th year, Harris Teeter and Titan Farms came together with a shared purpose: helping put fresh, nutritious food on more tables. Together, we donated 37,800 pounds of fresh peaches to Second Harvest Food Bank of Metrolina, helping support families across our community.

We're grateful for opportunities like this to put our purpose into action, sharing the food we love with the communities we love.

🌮🔥 These Taco Sloppy Joe Sliders are cheesy, saucy, and stacked with bold flavor—perfect for game day, weeknights, or feeding a hungry crowd fast. Grab your ground turkey and Simple Truth Organic Salsa at Harris Teeter, bake up a tray, then pile on that chipotle mayo drizzle like you mean it. Warning: these disappear FAST! 😏🧀

Prep Time: 10 minutes
Cook Time: 25 minutes
Total Time: 35 minutes
Yield: 12 sliders

Ingredients:
1 lb. ground turkey
1 small onion, diced
1 packet taco seasoning
1 cup Simple Truth Organic Salsa
1 package slider rolls
2 Tbsp. butter, melted
8 oz. sliced pepper jack cheese
2 cups shredded lettuce
½ cup chipotle mayo

Directions:
1. Preheat the oven to 350°F. Grease a 9x13 baking dish and set aside.
2. In a large skillet over medium-high heat, brown the meat and onions. Stir in the taco seasoning and salsa. If too thick, add a tablespoon or two of water to loosen the mixture. Reduce the heat to medium low and simmer for 5 minutes until the sauce has thickened slightly.
3. Slice the entire sheet of slider rolls in half horizontally. Place the bottom half in the prepared dish.
4. Spread the taco meat over the bottom buns. Sprinkle with the pepperjack cheese, the top them with the top half of the rolls. Brush the tops with the melted butter.
5. Bake for 10-15 minutes or until the cheese is melted and the buns are golden.
6. Remove from heat and garnish with the shredded lettuce and chipotle mayo, as desired.

This Creamy Pesto & Orzo Bake is your one-pan, no-stress hero—with pasta, rotisserie chicken, and a rich pesto cream sauce that bakes up perfectly cheesy and cozy. Using rotisserie chicken in this baked orzo dish is an easy “dump and bake” method that turns leftovers into a creamy, one-pan meal perfect for busy evenings.

Prep Time: 10 minutes
Cook Time: 40 minutes
Total Time: 50 minutes
Yield: 8

Ingredients:
2 cups chopped rotisserie chicken
1 lb. uncooked orzo
3 cups Simple Truth Organic Chicken Stock
½ cup heavy cream
½ cup Private Selection Pesto
4 oz. Simple Truth Organic Spinach
1 cup shredded mozzarella
1 cup Private Selection Shredded Parmesan, divided

Directions:
1. Preheat the oven to 425°F. Grease a 9x13 baking dish and set aside.
2. In a large bowl, combine chicken, orzo, stock, cream, pesto, spinach, mozzarella, and ½ cup of the parmesan cheese.
3. Pour the mixture into the prepared dish. Cover with aluminum foil and transfer to the oven. Bake for 30 minutes. Carefully remove the aluminum foil and do a test of the orzo. Cook for an additional 5-10 minutes, or until the orzo is al dente.
4. Remove the dish from the oven, give the mixture a stir, and allow to rest 5-10 minutes to thicken before serving.

Dinner just got a Tex-Mex glow-up. These stuffed bell peppers are loaded with seasoned beef, rice, black beans, corn, and salsa, then baked under melty Mexican cheese and sauced with enchilada goodness. They’re hearty, colorful, and packed with Tex-Mex flavor—made even easier with Simple Truth Organic staples from Harris Teeter. Top with avocado, sour cream, and cilantro for the perfect finishing touch. 🌶️🧀
Prep Time: 15 minutes
Cook Time: 1 hour
Total Time: 1 hour, 15 minutes
Yield: 8 pepper halves

Ingredients:
4 bell peppers, cut in half and deseeded
1 lb. lean ground beef
1 jalapeno, seeded and diced (optional)
1 packet taco seasoning
1 cup cooked rice
1 cup Simple Truth Organic Thick and Chunky Mild Salsa
1 cup Simple Truth Organic Frozen Corn
1 cup Simple Truth Organic Seasoned Black Beans, drained
1 cup red enchilada sauce
2 cups Mexican Blend shredded cheese
Garnish with: sliced avocado, sour cream, and cilantro

Directions:
1. Preheat the oven to 350° F. Grease a baking dish and place the pepper halves in cut-side up.
2. Add the ground beef and diced jalapeno (if using) to a skillet and cook over medium high heat until no pink remains. Once the beef is cooked through, add the taco seasoning, rice, salsa, corn, and black beans. Stir everything until well combined and remove from heat.
3. Divide the mixture between the 8 pepper halves. Pour the enchilada sauce over top and top the peppers with 1 cup of cheese.
4. Cover and bake for 45 minutes. Uncover, sprinkle with the remaining cheese and cook for another 5-10 minutes, or until cheese has melted completely and the peppers are cooked through. Place the peppers under the broiler for a minute or two for a golden top. Be sure to watch the oven closely so the cheese doesn’t burn!
5. Serve and garnish with avocado, sour cream, and cilantro if desired.
