La Cucina Galbani is excited to have Carmella Alvaro Reamer as this year's Chair and emcee! Carmella is the owner of Melina's Fresh Pasta and Il Laboratorio - The Cooking Lab, both in Durham. Carmella brings the art and experience of crafting fresh pasta, ravioli, sauces and more (with a focus on the unique recipes from the 20 regions of Italy) from her classes at Il Laboratorio straight to La Cucina Galbani in . Joining her will be some of her fellow chefs in the Triangle. Details are coming soon!

Carmella, Owner & Pasta Maker at Melina’s Fresh Pasta, grew up in a traditional Italian-American family in Syracuse, NY (Go Orange!). The first to be born in the United States, she longed for a connection to the country every other member of her family was from. After years of watching her mother, Giuseppa, make homemade Italian food from what her father, Giuseppe,* grew in his garden, she wanted to share the Italian tradition of food made from scratch with care and served with love to family and friends. Upon arrival in North Carolina Carmella noted a lack of authentic Italian food in the area (and a lack of Italians!). So in 2010, she travelled to Bologna, Italy to supplement the Southern Italian cooking lessons of her mother and learn the Northern Italian tradition of fresh pasta making.
Fast-forward----Melina's Fresh Pasta is a Triangle favorite and the year-round cooking classes at Il Laboratorio are a hit with individuals, civic groups, and more. In 2022, the Melina's was awarded the best overall Made in NC Product by . Now in their 14th year Melina's Fresh Pasta can be found all over the Triangle in farmer’s markets and stores.
