Mama Hampton's Homemade Goods Mama Hampton's is a Cottage Food Business which sells homemade jams and assorted homemade baked goods. She was the inspiration behind it all!

I named it Mama Hampton's after my great grandmother, Ida Hampton. Thanks to the help of family and friends, I was able to locate several of Mama Hampton's original recipes. All of the foods I make are made using Mama Hampton's original recipes or using her recipes as a base to create wonderful tasty goodies. I have been told numerous times my products remind people of the foods their mothers and grandmothers used to make and bring back wonderful memories. I hope I can make that happen for you!

Week 6 recipe is Glazed Orange Pecan Bread. It turned out very different than I expected. This is not a sweet bread like zucchini or banana. It's more like a white bread with a touch of sweetness, pecans and orange flavor. Very tasty!

Glazed Orange Pecan Bread
1/4 c. butter, softened
3/4 c. sugar
2 eggs, beaten
2 tsp orange rind*
2 c. AP flour
1 tsp salt
3/4 c. orange juice
1/2 c. chopped pecans

Glaze
2 1/2 tsp orange juice
1/2 c. powdered sugar

Cream butter and sugar. Add eggs and orange rind. Mix well.
Combine dry ingredients. Add to cream mixture alternatively with orange juice. Mix well. Stir in pecans.
Pour into greased 9x5x3 loaf pan. Bake at 350⁰ for 50-55 minutes. Cool 10 minutes then remove from pan. Let cool completely.
Combine glaze ingredients and drizzle over sliced loaf. Yield 1 loaf.
*I didn't have any oranges to add the orange peel, so I substituted 2 tsp of orange extract. It really gave it a kick of flavor!

Week 5 of baking my way through Mama Hampton's recipes. This time I made her Lemon Lime Icebox Cake. She loved anything citrus, so this was a fav.
The recipe calls for Dream Whip, which once was a very popular dessert topping. It is still sold at the grocery where you'd find pudding mix.
Be sure to place your metal mixing bowl and beaters in the freezer before making the Dream Whip for best results.

Lemon Lime Icebox Cake

1 box Duncan Hines Signature Lemon cake mix
1 pkg lime jello

Bake cake according to directions. Mix jello with 3/4 cup hot water and 1/2 cup cold water. Poke holes in cooled cake and pour over jello.

Icing
1 pkg Dream Whip
1 pkg lemon instant pudding
1 1/2 c. milk

Beat until stiff. Spread on cake and store in the icebox.

I know I'm a week behind, but here is the Week 4 recipe :Lemon Cake Pie. "This is like a lemon pudding on the bottom and cake on top", Mama Hampton wrote. My only edit to this would be to use a deep dish pie crust.

Lemon Cake Pie
1/3 c butter
1 c sugar
2 tbsp flour
1/8 tsp salt
1 tsp grated lemon rind
1/4 c lemon juice
1 c milk
2 egg yolks
2 egg whites, beated stiff

Cream butter and sugar. Add flour salt, lemon rind and egg yolks. Mix well. Stir in juice and milk. Fold in egg white. Pour into unbaked shell. Bake 10 minutes at 425⁰. Then bake 50 minutes at 325⁰.

This week's recipe from the Mama Hampton's archive is The Next Best Thing to Robert Redford. It's a layered dessert that got its name as Cool Whip was becoming a popular alternative to having to whip your own whipping cream. And, as rising actor, Robert Redford, became a heartthrob.

Very easy to put together and would make a great get-together dessert!

Robert Redford Dessert

1 c flour
1 stick butter, melted
1 c chopped nuts
1 c sugar
Mix and press into cake pan. Bake 15 minutes at 350⁰. Cool

8oz cream cheese
2/3 c sugar
6 oz cool whip.
Mix together and spread on crust

1 pkg vanilla pudding
1 pkg chocolate pudding
3 c cold milk
Mix together and spread over cool whip layer

6 oz cool whip
Miniature Hershey bar
Spread cool whip over pudding layer. Top with grated Hershey bar. Refrigerate 6 to 8 hours.

Today's shareable recipe is Mama Hampton's Caramel Apple Coffee Cake. It's so decadent and delicious!
My tips: I didn't use any nuts. I baked for hour, turned oven off, and kept cake in oven for last 15 minutes. And, I allowed the caramel sauce to cool a little before I spooned it on cake.
Recipe
3 eggs
2 c. sugar
1 1/2 c. oil
2 tsp vanilla
3 c. flour
1 tsp soda
3 c. chopped apples
1 c. nuts
Beat eggs until foamy. Gradually add sugar. Blend in oil. Combine dry ingredients and add. Add eggs. Stir in apples and pecans. Bake 1 hour 15 minutes 350⁰. Cool 10 minutes, remove to platter.
Topping
1/2 c butter
1/4 c evaporated milk
1 c packed brown suga
Boil ingredients for 3 minutes. Pour over hot cake.

Back in the 1800s, there were different kinds of pie called Desperation Pies. They were pies that used ingredients people had on hand instead of hard to find ingredients such as fruit. These pies become popular once again during the Depression. Mama Hampton had written recipes for 3 of these pies. 1. Chess Pie- made to mimic a Pecan/Custard Pie. 2. Surprise Pie- made to mimic Apple Pie. 3. Vinegar Pie- made to mimic Lemon Pie. Today, I will share the recipe for Chess Pie:
1 c. buttermilk
1 stick butter, softened

Mama Hampton's Tip #2. Let's talk green onions. To prolong life, simply put them in a jar filled with water and leave them on the counter. If you're not planning on using the green stems right away: slice them, place on cookie sheet, and freeze. When frozen, put in ziploc bag. You can take out just the amount you want to use. Now, be sure to leave the onions in the water. The green stems will grow back! Change the water as needed.

Thought I'd pass along some tips I learned from Mama Hampton that are especially useful right now. Tip #1: When you buy celery, cut it into desired piece lengths, fill a round container with water, and keep the celery in the fridge like this. It will prolong the life and keep your celery crisp. Change the water every few days when it starts to get cloudy. Don't throw away the leaves or any undesirable parts, I'll share some ideas with those later. Just keep them in a ziploc bag.

Available items include: Pecan & Pumpkin Pies ($8), Pumpkin Rolls ($8), and Old Fashioned Fudge- Reece Cup, Peanut Butter, Orange Cream, Chocolate, and White Chocolate ($5 for 1 pound).
