Baked Salmon & Asparagus

Bake at 400° for 25-30 mins
Serves 4

Ingredients:
4 Salmon filets
Salt & Pepper
Oregano
Olive Oil
Parmesan cheese
Mozzarella cheese

Directions:
1. Line baking pan with parchment paper
2. Place rinsed, cut asparagus spears (cut off woody stems) along the long sides of your pan.
3. Place salmon in the center (skin down)
4. Salt & Pepper fish & veggies
5. Drizzle everything with olive oil
6. Sprinkle oregano on all
7. Add parmesan cheese (cooks choice amount) on all
8. Add mozzarella cheese on asparagus only (cooks choice amount)
9. Bake for required time

Pair with a full-bodied white wine like oak-aged Chardonnay, Viognier, Marsanne, White Rioja, White Burgundy, and White Pinot Noir for the prefect combination. Good just as is or add a long grain and wild rice to your dish.

Sofrito (English)

Ingredients:

6-8 garlic cloves, finely diced
1. Medium yellow onion, finely diced
1. Red pepper, finely diced
1. Green bell pepper, finely diced
½ cup of vegetable oil
12oz Hunts tomato sauce
1 ½ teaspoons oregano
1 ½ teaspoons of cumin
¾tsp paprika
2 bay leaves
Roasted Red Peppers
1 large can of sweet peas, drained
Spanish olives, at your discretion.

Directions:
1. In a deep frying pan, put the oil and cubed garlic and sauté for 5 minutes over ¾ heat, stirring constantly.
2. Add the chopped onions and sauté until the onions become translucent.
3. Add diced red and green bell peppers and sauté for about 5 minutes to soften.
4. Add dry spices and mix well.
5. Add Hunt's tomato sauce, mix well
6. Add olives (optional), mix well.
7. Ready to use/store.

Notes: Store in a glass jar with a lid and keep in the refrigerator for up to 4 weeks. Use as needed.

Sofrito (de Elsy)

Ingredientes:

6-8 Dientes de ajo, finamente cortados en cubitos
1. Cebolla amarilla mediana, finamente cortada en cubitos
1. Pimiento rojo, finamente cortado en cubitos
1. Pimiento verde, finamente cortado en cubitos
½ taza de aceite vegetal
12oz de salsa de tomate Hunts
1 ½ cucharaditas de orégano
1 ½ cucharaditas de comino
¾tsp pimentón
2 hojas de laurel
Pimientos Rojos Asados
1 lata grande de guisantes dulces, escurridos
Aceitunas Españolas, a su discreción.

Direcciones:

1. En una sartén profundo, ponga el aceite y el ajo en cubitos y saltee durante 5 minutos a fuego de ¾, revolviendo constantemente.
2. Agregue las cebollas picadas y saltee hasta que las cebollas se vuelvan translúcidas.
3. Agregue los pimientos rojos y verdes cortados en cubitos y saltee durante unos 5 minutos para hablandár.
4. Agregue especias secas y mezcle bien.
5. Agregue la salsa de tomate, mezcle bien
6. Agregue las aceitunas (opcional), mezcle bien.

Notas: Coloque en un frasco de vidrio con tapa y guárdelo en el refrigerador por hasta 4 semanas. Use según sea necesario.

GARBANZOS/Chick Pea Soup

Tools: Instapot or Electric Pressure Cooker

Ingredients:
1 bag Chick Peas (soak in water from the night before in mixing bowl)
*Salt Pork (cubed)
*Cubed Ham
2 Chorizos (sliced in rounds)
*Potatoes (peeled & cubed)
Pork shanks (2-3 whole shanks)
½tbs Salt
¼c Sofrito

1. Fill Instapot or electric Pressure Cooker ¾ of the way with water.
2. Drain chick peas in mixing bowl, rinse, and add to pot.
3. Add salt, potatoes, salt pork, ham & shanks.
4. Select the SOUP or BEANS option on your cooking pot, cover, and let it cook.
5. When done, RELEASE STEAM, add ¼ of sofrito & stir.
6. Run the SOUP or BEANS selection again, this time without locking in the lid, just place it on top and let it do its thing.
7. Once that is done your soup will be thickened appropriately.

Done! Enjoy!! This is my mom's recipe 🥰

PS: You can fill individual Tupperware containers (after they've cooled on the counter) and freeze them for up to one year. Microwave individual servings for 3 minutes, stir, microwave an additional 3 minutes and it should be good to go. You can heat it longer if necessary.

"Parmesan Chicken Breasts"

A tasty and tender chicken dinner you'll family will love. The most moist chicken you'll ever bake! 45 minutes start to finish. You'll love this recipe.

INGREDIENTS

4 boneless, skinless chicken breasts
1/2 cup mayonnaise
1/2 teaspoon seasoned salt
1/2 teaspoon paprika
1/2 teaspoon garlic powder
1/2 cup finely grated Parmesan cheese
3/4 cup Panko crumbs (I use Italian flavored)
Butter cooking spray
Chopped parsley, optional

INSTRUCTIONS

*Grease a 9x13-inch baking pan and preheat oven to 425 degrees.

*In a shallow bowl, whisk together mayonnaise, seasoned salt, paprika, and garlic powder.

*In a separate shallow bowl, combine Parmesan cheese and Panko crumbs and mix.

*Coat each chicken breast in mayonnaise mixture and then press both sides in Panko/Parmesan mixture.

*Place chicken in prepared pan.

*Place in preheated oven for 30-35 minutes and done!
