Milk Testing: What It Is and Why It Matters
Raw milk from cows grazing on quality pastures full of nutrient-rich forbs and grasses is a truly exceptional, nutrient-dense food. However, like any fresh food from a living animal, it can also carry risks if not handled properly.
Excellent sanitation, rapid cooling, a clean and closed milking system, and—most importantly—healthy cows are all essential for producing milk that is safe and free from harmful bacteria or contaminants. When any one of these elements is overlooked, problems can arise.
That’s where milk testing comes in. Regular milk testing gives you objective data on the quality and safety of your milk. It measures critical indicators such as:
• Bacterial counts (Standard Plate Count, Preliminary Incubation, and Coliforms)
• Somatic Cell Count (an indicator of udder health)
• Fat and protein content
• Other important markers
The Raw Milk Institute (RAWMI) has established clear, science-based standards for producing the safest possible raw milk. My samples have consistently exceeded these benchmarks. This data gives me confidence that I’m doing everything possible to provide my community with clean, delicious, and safe raw milk.

It's butter making day again! 5 gallons of cream into 13 # of delicious bright yellow butter! I decided that I no longer need to hoard this precious food. I've more than plenty stocked up, and have a feeling I'll be making plenty more over the spring and summer, so I'm offering it for sale for $16 a pound. Holler if you want some! There's not much better than fresh butter on bread just out of the oven. Now I need to go bake! Well, I need my children to go bake, it's been a long day. 😁

This is what one day's, plus a few extra jars, worth of milk looks like! The cows have been out on grass for a week or so now and you can sure tell! The cream is golden and the buckets are overflowing! I'm delivering most of this to Fayetteville tomorrow, to feed a bunch of my wonderful customers. Of which I need more! If you are interested in adding raw milk to your diet, from Jersey cows on grass and supplemented with a non gmo ration, please get in touch. I've got plenty. 😄

I've been making cheese every day this week. I'm currently getting so much milk that I'm running out of jars! So I just bring up a 2.5 gallon bucket full of fresh warm milk and start the cheese process. I've been making Colby because it's a relatively simple process, and I've just about got it memorized. It still is a 4 hour hands on process, then it's in the press. Unfortunately, it has to cure for about 6 weeks before I can try it.
My wonderful husband built me a cheese press out of a maple tree that fell on our property a couple years ago, he milled the lumber and built this thing following a picture. It works so well, my counterweights are just whatever I have on hand, two vinegar jugs work well to make the 40-50 needed for the final pressings. One of these days I'll do the math and calculate exactly what weight is needed at exactly what place on the handle. Or more likely I'll just continue saying close enough is perfect. I've also been making a cultured mozzarella that's just amazing, and will be available to purchase! We just had it on pizza for lunch, soooo good!

Hooray for Oklahoma's raw milk freedom bill! Hopefully this will be signed into law soon.

I had made up my mind years ago never to own goats again, I'd rather have fruit trees and a garden, and neighbors that don't hate me. But then Aleya decided she wanted goats, and was willing to work to earn money to purchase them, and build the fence, so now we have goats! She was out there multiple days pounding T posts, digging post holes, and attaching fence clips. I'm actually a bit excited as the gully area we fenced is overrun with nasty sweet briar vines and blackberries. It will be nice to have them keep it tidy. And now that we have good fence hopefully I can still have fruit trees. So, welcome to the farm Skidamarink, Chamomile, and Sage! I have been singing Skidamarinky D**ky D**k non stop since we got them. 😄 🎶 I love you in the morning, and in the afternoon, I love you in the evening, and underneath the moon. 🎶

Y'all, my Walking Onions are going crazy. Does anyone want some bulblets? These are great for the black thumb gardener, you can pretty much ignore them and harvest greens all year. You can use the bulbs too, but I usually just use them as green onions. They're fun to grow and reproduce like mad.

Hey y'all, if you have a brown thumb like I do, check out the Miller's farm, they have a lovely greenhouse with a thick crop of greens. I promise they're 1000 times better than Walmart's. 😄 I'm currently enjoying them topping off my overstuffed pulled pork burrito, leftovers FTW!
The Millers also have a micro dairy with raw milk, eggs, and hand made soaps. Isn't it wonderful to live in an area with so many options for farm fresh food! I count my blessings every day. https://www.facebook.com/WaltzingRockFarm

And, our milk and egg production is finally increasing with the longer days and spring grass growth, holler if you're in need. 😀
