LEMONGRASS-MINT MOJITO RECIPE 🌿

INGREDIENTS:
 
- 6 fresh mint leaves, plus a sprig for garnish
- 1-1/2 tablespoons simple syrup (see below)
- 1 tablespoon fresh lime juice – slice half the lime into wedges and garnish the drink.
- 1 tablespoon Lemongrass-Mint White Balsamic Vinegar
 2 ounces light Rum
- club soda

Place mint, simple syrup, lime juice, and Lemongrass-Mint White Balsamic Vinegar in a wide glass. With a wooden spoon, muddle mint, simple syrup, lemon juice, and balsamic vinegar together to form a good syrup. Add ice cubes, then pour Rum and club soda, mix. Garnish with mint leaves and limes.
 
SIMPLE SYRUP
 
- 1 cup (8 ounces) water
- 1 cup granulated sugar

Bring the water to a simmer in a saucepan set over medium-high heat. Add the sugar and stir until it completely dissolves. Remove the pan from the heat. Set aside to cool to room temperature. Pour the syrup into a clean 1-pint bottle, cap it, and refrigerate it until needed. Makes 1½ cups and keeps two months or longer in the refrigerator.

CHILI VERDE WITH SAUSAGE

INGREDIENTS:

For Tomatillo Salsa
1 ½ lbs. of tomatillos
3 serrano or 5 jalapeno peppers (de-seeded)
3 garlic cloves – peeled
1 large white onion, peeled and diced
¼ cup of EVOO 
Kosher Salt
½ cup chopped fresh cilantro
Freshly ground black pepper

For Chili:
2 tablespoons of Cilantro and Roasted Onion Infused Olive Oil
1 large yellow onion, roughly chopped
1 lb. of sausage (mild)
1 ½ teaspoons dried oregano
3 garlic cloves chopped finely
1 – 15oz can of hominy
½ cup of chopped fresh cilantro
2 cups of chopped and peeled butternut squash
Kosher Salt

DIRECTIONS:

Make the tomatillo salsa – preheat the broiler. Remove the husks from the tomatillos, then rinse them under warm water to remove the stickiness. Dry with a paper towel. Put the tomatillos, chiles, and sliced onions on an aluminum-covered baking sheet. Drizzle with the EVOO and sprinkle 2 teaspoons of salt. Broil for a few minutes, turning every so often, until the tomatillos are soft and slightly charred. Let them cool. Transfer the broiled vegetables to a blender, add the cilantro, and puree until smooth. Season with salt and pepper.

Make the chili – heat the Infused Olive Oil in a Dutch oven or a large saucepan over medium heat. Add the chopped onion and cook, stirring occasionally, until just translucent (4 min). Add the sausage and cook, stirring and breaking it apart until browned. Spoon out and discard the excess fat, leaving 1-2 tablespoons in the pot. Stir in the oregano and garlic, then cook, stirring for about 3 more minutes.
Stir in the tomatillo salsa, hominy (including the liquid), cilantro, and butter squash. Bring to a boil, reduce the heat to medium-low, and simmer, covered, until squash is tender (15-20min). Taste and season with salt if necessary. Top with Cilantro and cut chiles.

TERIYAKI SALMON RECIPE 😋
 
INGREDIENTS: 

-2 1/2 lbs salmon filet sliced into 2” wide slices

For the Teriyaki Sauce:

-3 Tbsp hoisin sauce
-3 Tbsp soy sauce
-1/3 cup Honey Ginger White Balsamic Vinegar
-2 Tbsp Japanese Toasted Sesame Oil
-2 large or 3 medium garlic cloves minced
-1/2 tsp freshly grated ginger

To serve:

-Sesame seeds to garnish are optional
-Green onion chopped, optional
 
DIRECTIONS:

Grease a large rimmed baking sheet (cover with foil and then grease for easier clean-up). Preheat oven to 400˚F. Combine the sauce ingredients and stir until the sauce thickens. Place individual salmon slices in a mixing bowl. Pour the sauce over the salmon, cover with plastic wrap, and let marinate 20 minutes (at room temperature or refrigerated). Transfer salmon to prepared baking sheet (keep the marinade). Bake at 400 for 12-16 min or until salmon is flaky and cooked through; bake times may vary by the thickness of the salmon. While salmon is baking, transfer remaining marinade to a small saucepan and bring to a boil, then reduce heat to a simmer and cook, stirring occasionally until slightly thickened (3-4 min), then remove from heat. Once salmon is out of the oven, brush with teriyaki syrup, then sprinkle with chopped green onion and sesame seeds as desired.
