One of the best methods of preserving our Shrimp is IQF. IQF stands for Individually Quick Frozen. When we IQF shrimp it has distinct advantages and some disadvantages as well. One of the main advantages are that the shrimp are frozen just after they are harvested. This preserves the freshness. The other advantage is that we can separate the shrimp in 50-60 LBS lots and they can be held in the freezer and thawed for consumption in any amount. If you want to have one shrimp you just grab it out of the freezer. The choice is up to you. 1 or 100, the rest of the shrimp will remain frozen and available. The disadvantages are small. First being that the head is not as good for consumption as with fresh (only a small percentage of folks eat the head of the shrimp). The second is that the Legs, Tail and other parts of the shrimp may break off due to being brittle (this may make the shrimp less attractive for shrimp cocktail for instance). Take a look at the pictures and see what the IQF Shrimp look like as they are prepared for eating. From freezer to ready to cook. FYI if you shop at a seafood market and they state "Fresh Previously Frozen" this is likely IQF Shrimp.
