I saw this recipe for Kale in Cooking Club fall issue, it really looks good. "Kale with Caramelized Apples" 3 tablespoons olive oil, divided,11/2 cups thinly sliced sweet onion, 1 large apple, such as Honeycrisp, Braeburn or Gala, unpeeled, cut into 1/2-inch pieces(about 1 1/2 cups), 8 cups coarsely chopped kale (thick stems removed), 1/4 teaspoon kosher salt, 1 tablespoon apple cider vinegar.
1. Heat 11/2 tablespoons of the oil in large nonstick skillet over medium-high heat until hot. Add onion and apple: cook 5 to 8 minutes or until browned, stirring occasionally and reducing heat to medium if cooking to fast. Remove apple mixture. 2. Add remaining
oil to skillet: heat over medium heat until hot. Add kale and salt, turning with tongs to coat with oil. Cover and cook 5 minutes or until crisp-tender, stirring occasionally, Uncover: stir in apple mixture and vinegar until combined.
