Homemade Bacon/Jalapeno cornbread: 1 cup flour, 1 cup cornmeal, 2 tsp. baking powder, 1/2 tsp. baking soda, dash of salt, 1 1/2 tablespoon oil (bacon grease or coconut oil), dash of sugar, krispy bacon bits freshly cooked, Jalapeno jelly to taste, 1 egg & buttermilk. Mix well. Preheat oven to 425.
Heat the inside of the skillet in the oven with bacon grease (I use coconut oil), pour in mixture & bake 20 minutes. Check with a toothpick. Melt butter on top & enjoy!
