On this episode of Meatless Mondays, this cozy, protein-packed bean soup is calling your name 🥣✨
It’s hearty, budget-friendly, and comes together in one pot (aka minimal cleanup 🙌). Perfect for meal prep or a quick weeknight dinner that actually fills you up.
Save this for your next cozy night in 👇
You’ll need:
• 1 medium yellow onion, small diced
• 2 large carrots, diced
• 2 celery ribs, diced
• 4 large garlic cloves, minced
• 3 tbsp olive oil
• 1 (28 oz) can crushed fire-roasted tomatoes
• 2 (15 oz) cans pinto beans, drained
• 1 (15 oz) can kidney beans, drained
• 1 quart vegetable broth
• ½ tsp cumin
• 2 tsp salt
Quick how-to:
Sauté your onion, carrots, and celery until soft → add garlic → stir in the rest → simmer → done. Easy, cozy, and so good 🤍
