I am sad to say that 2025 is the last year we will be selling our beef quarters.
In 2015 as a senior at SDSU I had the idea to develop one of the best beef brands in the state. I needed a product that was unique and flashy. I had heard of Wagyu/Akaushi cattle breeds and wanted to experiment with the idea of crossing Japanese breeds to the angus simmetals my dad had been running on the family farm. My theory was that we could build a steer that marbled out and grew large amounts of muscle in a short period of time. A great beef product which did not get dragged down by the long feeding periods the wagyu usually take to finish.
I was right, and our first quarters were sold to family in 2016.
People were selling farm to table but it was a cumbersome process. I stream lined it and made ordering a customer friendly experience.
In the past 10 years the country has come to realize that beef is a superfood. More people are selling direct farm to table beef than ever before. And fake meat is not what it is hyped up to be. I am proud to have built the 7S Beef branded in this time.
Dad (Kevin) is still running some cows on the ranch. But in anticipation of mom’s (Shelly) much deserved retirement and my move to Rapid City. It is a lot of work to sell quarters. So we are no longer going to be offering quarters for sale.
